Nice work. There are many styles, but I recommend you mix the dry seasoning into the chunks of meat prior to grinding. Makes for a way more even blend. Also, incorporate the fat into the grind by grinding a chunk of goose, then a chunk of pork. Just my 2 cents. I make a ton of sticks and sausages.

I just did this the past weekend I made 20 pounds of goose meat I went 3 to 1 goose to pork butt. Then I cooked them on 205 for 2 hours. They are phenomenal

Do the collagen casings separate from the meat after freezing? I get a great bind on the cook, but once they freeze, and get thawed again for eating, the casings loosen right off and are soft.
Hey i noticed that when i vacum sealed them they got watery how do you keep them if you want to eat them for the week. Basically how do you keep them fresh and dry?

That looked good but the Goose I haven`t see any in this part of Florida and we are not in what you would call the Flyway for Ducks . So mine will have to be a mixture of Ducks and Pork Butt .
