Fried miso aubergine (Nasu Dengaku) ingredients (for 2 persons):
aubergine x 1 large
cooking oil x enough to fry
white and black sesame seeds
salad cress to garnish x optional
For the Fried aubergine (Nasu Dengaku) miso glaze:
(enough to cover 2 whole aubergines/4 halves, adjust amounts accordingly)
red miso x 4 Tbsp (typically red miso is used for a Dengaku Miso glaze, but any other miso is fine to use)
cooking sake x 2 Tbsp
mirin x 2 Tbsp
sugar x 2 Tbsp
honey x 1 tsp
**this Dengaku miso glaze will also be ideal to use on a variety of other vegetables including tofu, daikon mooli radish and konnyaku**
Baked spicy miso chicken wings ingredients (for 2 persons):
chicken wings x 2 pounds / 900 grams
baking powder x 2 1/2 tsp
corn flour x 2 1/2 tsp
spring onion x 1 (optional)
for the spicy miso sauce (enough to make 5 pounds of wings, adjust accordingly):
white miso x 60 grams
dark soy sauce x 1 tsp
garlic powder x 2 tsp
water x 6 Tbsp
chilli paste x 3 tsp (optional - other chilli sauce is fine to use)
sugar x 4 Tbsp
**this spicy miso sauce will make a perfect accompaniment to a variety of other dishes including pork loin steaks, grilled fish, grilled lamb chops, grilled salmon etc**
** the above miso glaze and miso sauce can be stored in airtight containers in the refrigerator for around one month**

Miso is the best! I make a very similar sauce but with gochujang instead of that type of chili paste. Unreal, i also like honey instead of sugar. Great job!

Wow chef Dai I've just made the miso fried aubergine and it was soooooo nice. I'm following low fodmap for IBS and I really need to make sure I eat a wide variety of vegetables in small servings. Half a small aubergine was perfect as I'm allowed 75g. Thank you so much this recipe is super tasty and satisfying. Bonus I've got the other half for lunch tomorrow 😁😋

When it comes to chicken wings I love how succulent the flats are. I prefer them, even though they don't have as much meat as the drumettes 😁

Would you recommend putting the miso sauce glazed chicken back into the oven for an additional 5 minutes to caramelize the sugars in the sauce?

I only have dark miso currently, would that be an ok sub?
Dark miso is red miso but aged longer; red miso will naturally turn dark the longer it's stored. If you bought it dark at a store it was probably oxidized for the color.

I’m not sure what type of miso you have but as Dork said, once miso become exposed, it will darken. If it taste fine, should be fine to use as in this recipe. Hope you’re keeping well x
