    I cut up an old towel and use two layers of it, soak in water, gently ring out. Wrap it around the pan and secure it with a safety pin. It is reusable and I have been doing this for over 30 years.

      Ingenious, Thanks Linda! You think it’d be overkill to add one additional layer, then quilt the three layers together and clean up the sides with a serger?

    What a great tip! I love using my cake strips but they are expensive. It's great to know that we can make our own and that they work well.

    I just tried this last night using wet paper towels wrapped in the foil. Worked perfectly! I don't bake very often, so it's not worth the investment of cloth strips, so this was a great alternative.

    Just made and used baking strips per your tutorial. Waiting for the cakes to come out of the oven. You said you could reuse them upt to about 5 times. Do you rewet them? If so, how?

    @radbcc, when you have multiple layers, it helps to have the top flat so the layers fit together. The alternative is to either bulk up on the icing to even out the tops, carve the tops off with a knife, or having a really weird looking cake.

      or, flip one over on the plate, so the top is the bottom, then both bottoms fit together nicely. The top of the cake will be domed, but that's how our cakes always looked when I was growing up.

    Another way to avoid domed cakes is simple. Turn the temperature down! If you get domed cakes at 350, turn down to 300F. 150C, gas 3. Most sandwich cakes will take between 30 and 40 minutes, cupcakes exactly 22 minutes!

      no matter the temperature, the outside will always bake faster, because the inside is insulated

      I Fold use a damp tea towel [which I've cut in half lengthways or it would be too thick] folded several times length ways and wrap it around the cake tin, secure with a length of string knotted around the tea towel :-)

      I was thinking the same. Foil thing is expsive and not that much reausable. You can use a fabri headband or take an old towel and sew elastic in it like a headband but take a rough measure of your pan first.

    1. You really breeze past that 'pitching the ends together' part. I am sure it is because I am not very bright, but every time I try to pinch the ends of the tinfoil together, they just come apart.
    2. Can I use any kind of twine? Does it have to be some kitchen specific twine? Should I be concerned that the twine will catch on fire?
    While I enjoyed this demo, without being able to securely pinch the two ends of the tinfoil together so that they will stay in place, or know what kind of twine I can use, this is useless.

    Wow, same goes for actually getting the twine around the pan with loose tinfoil around it. I love your cut scene where you go from beginning to wrap the string around the pan to tying it. Terrible waste of time and energy. If you are a new baker reading this, please don't worry. There are places you can go where the instructions are complete and coherent.

    doesn't the cake get covered in icing anyway? why does the cake have to be perfect? another example of wasting time and money....(including me writing this)

      3 domes (one each level) means uneven filling in each layer. also more icing required
