A quick flick of the "holding" hand as you're lifting your "hiding" hand could be used to flip the coin into the other orientation. Or using the "hiding" hand's thumb to flip the coin as you lift up the hand.

Theres an even easier sleight of hand trick on this. It works better with bigger coins. Its hard to explain in words, but you basically lay the coin near your index finger with the side you want face up in your palm and flick your index finger upward as you toss. Instead of actually flipping, the coin goes into the air at an angle and spins horizontally. The angle and speed of the spin give the illusion of it flipping and you just let it land in the palm of your hand I can't remember where I learned this, but I think it was maybe some coin magic dvd by Jay noblezada from penguin magic.
tip: catch the coin in your palm and make sure your middle finger is over it, feel what side the coin is, if it's the side you want, reveal the coin, otherwise slap the coin on the back of your other hand thus flipping it, works every time
An easier way to cheat is to learn how to fake the toss. There's a specific way to toss the coin that doesn't cause it to spin but instead to quickly wobble which looks really similar.
