Episode 6 - Homemade Instant Pot Chili (w/ Dried Beans)

  • Online recipe from Paint The Kitchen Red
    Ingredients
    - 1.5 cups dried pinto beans
    - 1.5lbs ground beef (I used 1.5 cups dried red and black beans instead)
    - 2T vegetable oil (I used olive oil)
    - 2 cups chopped onion
    - 1 cup chopped bell pepper
    - 2T garlic
    - 3T Mexican chili powder (I used 1.5T regular chili powder)
    - 1T dried oregano
    - 2 tsp. cumin powder
    - 2 tsp. cacao powder
    - 1 tsp. salt or to taste
    - 1/2 tsp. black pepper or to taste
    - 1/4 tsp. cayenne pepper
    - 4 cups beef broth (I used 3 cups vegetable broth)
    - 14oz. can diced tomatoes (I used 28oz can fire roasted toms)
    - 1/4 cup masa harina
    I added:
    - 1 sweet potato - diced
    - 1 cup chopped green beans
    - 1 cup fire roasted frozen corn
    Tips
    - For serving: garnish with sour cream, cheese, scallions, chives, pickled red onions, etc.
    - Make some cornbread to go with this - so good!!
    - This made A LOT of chili so it's great for freezing leftovers or for larger families.

    How many cups of beans did you use since you adjusted the recipie?

    If the dried beans were pre soaked, how would you adjust the liquid in the recipe?

      Thanks for your question James! So in this recipe, I do actually pre-soak the beans as well. I think I soaked them overnight and then still used the 4 cups of broth. If you used canned beans, say, I'd maybe drop the broth down to 2-3 cups instead, and test it out that way. Prob starting with 2 cups, depending on how thick you want your chili. Plus the Masa will really thicken it up at the end as well. Hope this helps!
