The "Mock" Pineapple Recipe | Zucchini Chunks

- We've done a video before on doing this this shredded zucchini, so this time we're going to do chunks / tidbits instead. The recipe is still the same, no matter what style you choose.

Pineapple Zucchini Recipe:
4 quarts cubed or shredded zucchini
46 oz. canned unsweetened pineapple juice
1½ cups bottled lemon juice
3 cups sugar
Yield: About 8 to 9 pints
Procedure: Peel zucchini and either cut into ½-inch cubes or shred. Mix zucchini with other ingredients in a large saucepan and bring to a boil. Simmer 20 minutes. Fill jars with hot mixture and cooking liquid, leaving ½-inch headspace. Adjust lids and process. See Table 1 for recommended process time for using a boiling-water canner.

I have and abundance of zucchini from the garden this year. I got the other ingredients today. I will be making this tomorrow along with putting up peaches! I've been a zucchini freezing, pickle making machine the past week or 2. Today I pickled okra. Yum!

Well I have a story to tell about pineapple zucchini using your recipe! I made this last year and I love it! BUT yesterday I decided to make a zucchini bread using the pineapple zucchini with my two grand babies. We had a good time making the bread and everyone was excited to try a warm pice fresh out of the oven. I cut our pieces and everyone took a bite, the grand babies spit theirs out and said yuck as a 5 year and 3 year will do. I had to admit it really didn’t taste right! I ended up throwing it out, it was awful!
This morning I pulled out the jars thinking that they may be bad for some reason only to look more closer to the label. I had grabbed zucchini RELISH instead of pineapple zucchini!
I really love both canned items but I have discovered that they are not interchangeable! 😂

I always have a bumper crop of zucchini and I really appreciate your Playlist of the various ways to use it. I was worried that this recipe was not safe for water bath canning because I had read and heard that you can't safely can zucchini. I did my research and found, however, that THIS particular recipe is approved by the National Center for Home Food Preservation and I also found it on various university extension sites. You don't mention this in the videos, but it might be a good idea as there are misconceptions regarding canning zucchini. Thanks for all your hard work. It is much appreciated!
I did this a couple of years ago but used yellow summer squash instead. Even though my husband saw me do the entire process, when I made a pineaplle dump cake with a couple of jars, he did not believe it was squash and not pineapple. 😉

Rachel Ive been doing this too for a few years. I love knowing I can have my own faux pinapple on hand at a fraction of the price. Plus its good for you. This time I did a batch of shredded carrots mixed with the zuchinni in the pineapple juice. I labled it carrot cake starter.

Wow! I gotta tell ya, my mind is blown. I made this 2 weeks ago. Today I opened a jar and made pineapple upside down cake with these and the juice from these and holy...wow it's amazing! You really forget that it's not real pineapple when eating it! Thank you so much for making and sharing this!!!

Love it!!! I'm printing the recipe and will make this next spring when we can grow something. LOL day 62 and still no rain. We have a chance today and then one long week of 103 and late next week the rain turns on. All the pickles look delicious. The good news is we have two years worth of canned foods, pickles that we can use until the fall garden produces. I might go buy some zucchini and make a small batch. Good to see yawl. God Bless. This is the best recipe ever. I like to make crushed "pineapple" too. It's a great way to use up those zucchini that are getting huge and tough.

I canned most of my homegrown potatoes yesterday which gave me 18 2 pint jars of them. Today I've followed your zucchini relish recipe to use the glut and that gave me 12 pint jars.
I've already done pickled beets, apricot chutney and Jam, raspberry cordial, pickled garlic, runner bean chutney, ratatouille, and pasta sauces.
I love canning season so much.

Made my grated zucchini and pineapple juice a few days ago ...... delicious !! Making my zucchini chunks tomorrow. Thank you so much for this recipe, it is now a must every year. I will be adding a jar of the grated zucchini in pineapple juice to some fried pork with a few more vegies and spices ..... my mouth is watering just thinking about it !! I have been looking for ways to use the shredded mock pineapple. So far I've made pineapple upside down cake and Hawaiian Banana Bread. We ate the Hawaiian Banana Bread in 1 day. I'm glad you showed doing same leftover juice with another batch of zucchini. I had wondered if you could reuse the juice if you had more and today I did. So I'm on my second smaller batch using my left over liquid. 😋

I did a marathons this afternoon, I'm so tired😩, now I have dinner to get ready, I really wish he would get my outside kitchen together, I don't think it's gonna happen this year. I chopped & froze all my grn peppers. Put away grn beans I processed yesterday & I peeled & seeded & ground all my yellow squash (8 average sized), & put 2 cans of crushed pineapple together w/ 2 cans of water & 1/2 46oz of juice, 3 c sugar & the 1.5 c lemon. Then had enough leftover to add to a reg batch of your recommended ingred. To that I had 2 giant zucchini that I made into chunks. So 8 pints crushed pineapple & 6 qts chunked, 1 pt of jce. Remaining. Remember I'm 62 w/ health issues this was a lot for me, but now it's done, just gotta take care of the other 6 lg zucchini's hahaha
AWESOME I have 2 zucchini plants and gather every other day. I dehydrated slices with sea salt n italian herbs, for lasagna. Monday will be doing Chicken n also your zucchini pineapple chunks. Very cool idea.. Thanks. New subscriber

I made mock pineapple last summer. Both crushed and chunk. Comes in handy. I also canned real pineapple last summer when I got them for 1.50 each. So have alot of each on my shelves. Made yellow squash bread and butter pickles. Turned out so good. Just canned ground up cowboy candy. I like it better than the rings. Also canned blackberry pie filling. Went out and picked more blackberries today. Made chicken broth today. Letting it set up tonight and will can it up tomorrow after taking off the fat on top. Canned rhubarb BBQ sauce yesterday too. Trying to empty out a little space in my freezers. Busy time of year!

I love my new steamer water bath method so easy. Less water our water her in Ontario is very expensive . So I am very happy with mine.
That is so awesome to use the zucchini in this way ! Right now I am canning up about 22 pounds of carrots. I peeled and sliced yesterday . Already did up 7 quarts of them and then I am waiting for my second batch of beef stew ! Froze the rest of the carrots I did not can up as I can use those in some other way . All that peeling of carrots and slicing had my thumbs throbbing last night! Tomorrow I will make more balsamic onion jam ! My tomatoes are nowhere near ready to can, but that is a good thing as I need to pace myself ! Love 💕 watching you guys ! Thanks for making your great video’s! , I am always learning from you !

Being new to this channel, I don't see table 1, but other yt videos say to process in hot waterbath 15 minutes, no matter the size jar. Also, having seen other results, I think it's a great idea to use some yellow food color dye. Makes it very appealing. I'm gonna try using substitute sugar, like stevia or xylitol.

With the leftover juice, you could freeze some in blocks and add to soda water for a refreshing Summer drink out on the front verandah.

Such an interesting video to watch, Rachel and Todd! When I was a baby water-bath canner I of course had to try the mock-zucchini method. It was so much fun however...I think my zucchini must have had too much water content and diluted the pineapple juice too much. When I cracked open the jars it really tasted like sweet zucchini and not like pineapple at all. Made me sad and I didn't try that again until a couple of years ago. Hubby isn't really much of a fan of pineapple in the first place so I re-thought the process and did shreds the 2nd time thinking it would be a nice pineapple taste but without the mouth feel of the actual fruit, right? I think it worked but he still balked at the pineapple taste, haha. So I guess I just have to admit defeat and leave the zucchini for other purposes. So I guess I will just get to enjoy seeing you can your mock-pineapple and look forward to seeing how you and Todd use it in your meals of the week videos (hopefully!). Thank you and I hope you are enjoying your summer still.
i made this for first time this year and am really pleased with results. I figure the juice marketed was made from the less perfect, less attractive pineapple so im doing my part to ‘waste not, want not’ :)

Rachel, could I save the juice from canned pineapple to make this? No sugar added would be just the same as buying a jar of juice, I would think. Opinions welcome.
Should be the same thing, the issue would be storing time after opening the cans. No more than about a week in the fridge. In theory quite some time in the freezer. I always keep the juice for drinking, and in the fridge, but used in a couple days. If you mean saving through winter, there is a bunch of opinions on re-canning things like juice, so I'd research that, or again with the freezer. (Either freezer would be off limits here for something so frivolous as juice. lol NO room!)

My mum would can up fake pineapple chunks using Golden Delicious apples and pineapple essence. Back in the day (55 years ago)here in NZ pineapple fresh or canned was as scarce as hens teeth. My memory of them was a good one.
I think I’m going out to look for some pure pineapple juice.. how much cheaper could it be for a can / bottle and of pineapple

This is absolutely perfect because my daughter is allergic to pineapple, so I will use this recipe but sub the pineapple juice for apple juice and make mock apple slices. I have plenty of Zucchini coming in!
