It appears that your motivation is to measure HRV when it is not confounded by meditation or coffee or reading annoying emails. My motivation for using HRV is the converse! I want to measure the affect of these confounding factors on HRV. Is your app going to be applicable to my purpose?

If you are interested in the acute response to a transitory stressor, and measuring physiology pre/post or during the stressor, check out the Camera Heart Rate Variability app, which is a research version of the same technology, and allows for such measurement protocols.
