What is Pét-Nat?

We've had a lot of people ask us over the past week what pet-nat is and why it has a cap on the top! While we wrote a blog about what it is generally 🖥 it's a bit hard to picture what the process looks like!

This is an example of one of our favorite wines from Real Wine Fair with their Boogie 🕺pet-nat and how to disgorge it!
Disgorging is taking all the sediment (you can see it at the bottom of the bottle) and letting the carbonation rocket 🚀 it out so it doesn't stay in the wine.
There are lots of videos out there of people letting it rip like a racecar 🏎celebration, but the real way is actually in a bucket of water!
You can see our friends at Szolo using the bucket to let the pressure from the water keep most of the wine in while still getting the sediment out.
Most vintners do this before it gets to you and it may be why there's slightly less I'm the bottle than usual, but @szolowine has a different take and let's you participate in part of the winemaking action!
