I've made and canned Concord Grape Jam, apricot jam, plum jam and habanero red pepper jelly. I give you credit, Melissa for the effort involved! A labor of love...or not wanting to waste. Either way, a lost art of which I am trying to learn and appreciate!

I don't like Rhubarb but I love jam and I bet the jam will be delicious because it is being fixed by wonderful hands. Do you ever make sassafras tea in the winter time. ? I love that tea . I've heard the sassafras thins your blood. It's an old wives tale. Your going to be all set for winter what with all your canning your doing. Nice to have a big garden. My yard is just to hilly for a good garden. The jam looks delicious. Stay safe.

My Mom baked a Rhubarb and strawberry pie and it was delish. If you don’t like Rhubarb you would never know there was any in the pie. Melissa you have become an expert at canning. What’s next. ?
apple and rhubarb seem to go together well. Apple skin is a source of natural pectin also. I call it spring tonic because if you eat a bunch of it you tend to be more regular. good on ice cream

The price of it in the middle of winter is just ridiculous. I hope you found some to freeze with some strawberries. You mentioned vinegar in the pot, how much do you normally put in? @@astheroostercrows6435 I don't have hard water so I don't get that white film but I've heard others say they after the jars have set 24 hours, remove the rings and wash the jars in warm soapy dishwater that has a splash of vinegar. They say it takes that film right off. Rhubarb with cinnamon sounds divine. Thanks for sharing! Yum.
What’s your take on time of year for cutting Rhubarb? Here in Mn/WI I was always taught never cut it after the 4th of July, gives it time to replenish the root ball.

I almost did some with alternative sugar but didn't have enough rhubarb to do both, I decided I will do the sugar alternative (sugar free) jam next year
Yes I hope she uses them so I can learn out to use my attachments as well! I think she probably has a lot more attachments than I do for my kitchen aid. Maybe if she had them out and visible she would use them more. My kitchen aid is on my counter so it’s right where I use it but the attachments are put away until I need them.

This is Monday here and it looks like the rain is trying to move in some but the sun is stronger than the rain, and it keeps pushing the rain away. The leaves continue to change. I just love fall. I have heard through the grapevine that canned pumpkin is going to run short this year. I guess some folks are cooking the small pumpkin’s from the store and freezing the meat now. Hi Vicki, it's been pretty ugly here for about a week. Sunday was really the only nice day in over a week, cloudy and chilly and the leaves are falling fast. I did see that 2 years ago up here it was already snowing so at least it's not doing that yet. Where I'm from we never did much with pumpkin, we had so many fruits that we made pies with. I've been wanting to make a pumpkin pie to try my hand at it though. I did read though that the pumpkin you buy in the store is not actually pumpkin but squash as pumpkin is too stringy.
As The Rooster Crows I love pumpkin bread and pumpkin cookies as well. I’m really use to pumpkin pie and bread at Thanksgiving and Christmas. Yes, no snow here as well, that’s good. It tastes sour but when it’s cooked it’s a yummy treat! As kids we would get a little bowl of sugar with a washed stalk and dip it in the sugar to eat. Too sour without the sugar! You can make cakes, pies, wine, breads, jellies, muffins, almost anything that a fruit would be used in. It’s easy to find and ask neighbors for as well, to plant in your own yard. It usually requires 1 pie in return for some plants!
@Yaya 38103 did you hear the story of girl making something & she said that's way her mother always did it & her mother's mother before her. So someone asked why her mother did it so she asked. Her mother asked her mother(grandma)so grandma said i don't know why anyone else did it that way but my pan was too small!!
I love strawberry-rhubarb jam, but have never tasted just rhubarb jam. My mom always gives me rhubarb and I never know what to do with it. My attempts at baking pies have been disasters. I can make a tasty rhubarb dump cake using cooked rhubarb and canned pineapple (in juice). I use either strawberry or cherry chip cake mix.
How can anyone not like cinnamon? I start the day with cinnamon in coffee and drink iced cinnamon & ginger tea all day long (even during the winter). Will sometimes end the day with a shot of Fireball.
Is it possible if I shorten the recipe, put in regular glass jars and keep in frig? I don't water bath food or can food. Just wondered if I could do jelly like that for short term use. Thank you Melissa.

That lemon trick of yours works great! I have a HINT: try not to use the real 'green' stalks. Using mostly red stalks will make a prettier jam.

I just put a splash, it keeps the jars clean, if you don't put it they get a nasty white film on the lids and jars and is hard to clean.

Vinegar works in dishwasher too. Keeps the limestone film off when used monthly

Yes it’s sour and it has the same texture as celery.
The ruby red cooked is not as sour as the greener variety. The leaves of all rhubarb are very toxic.

if you ever forget to add the dash of vinegar, you'll kick yourself. The lids and jars develop a thick white film that is a pain to scrub off.
