Because Mariah felt like dubbing it. That's just what she does. The concert was recorded professionally anyway so the audio quality is not an issue. The undubbed vocal track would be perfectly fine to use, she just didn't want it for whatever reason. Background noise? Lmao. When you record a concert professionally there is no bg noise because each instrument and mic sends a separate track to the master soundboard. You could add effects to her vocal track, clean it, master it etc. without the need to dub over it completely. Dubbing is totally unnecessary. In fact, I don't know any other artist who does it to their performances. Mariah loves perfection and she simply wanted it dubbed. Just like she dubbed her 1990 debut concert, 1992 MTV Unplugged, 1993 Thanksgiving Special and basically any other prerecorded concert she decided to release.
