HOW TO : What is Salsify ?

Join me while I peel these long black roots in preparation for cooking. Salsify is a member of the #sunflower family. It looks similar to burdock root however burdock is shorter. After peeling, make sure you drop it in an acid-based water (with vinegar or lemon juice) to prevent oxidization. It can be baked, boiled or braised.
