Haitian Purple Beet Salad (Salad Russe) Recipe 🇭🇹

Haitian Beet Salad aka “salad russe” is a traditional side dish among Haitian cuisine that focuses on bringing out the sweet flavor of beets.
Ingredients:
1 lb red beets
1/2 lb Potatoes (red or white)
3 hard boiled eggs
1/2 red onion
4 tablespoons of mayonnaise
1 tablespoon Dijon mustard
1/2 teaspoon Salt
1/2 teaspoon Cayenne Pepper
Fresh Parsley
Optional:
Green Peas
Carrots
Sweet Red or Green Peppers
