If you disable coaster / scenery collision in the settings, you can have your coaster go through the water layer. Trust me, it’s worth doing because you get a nice big splash when the coaster hits the water! I have used this a few times to add a watercoaster style splashdown section to an otherwise non watercoaster ride.
People are saying this isn’t realistic because its underwater. But in the game, there is no could be real, with a sorta thin layer of water, and glass below it. It may not be a good idea, but it can still be realistic enough.

I know a lot of the cool factors of this ride is the fact that it’s underwater but you should probably add some sort of tube around the coaster if that’s possible, if you want to keep the realism. But honestly I think it looks better without the tube and I can suspend my disbelief for this

Put glass around the track pieces under water and add some bubble generators for affects. Put a couple break ones but maybe just after coming back into the water to slow down for scenery. Had a sunken ship and maybe some treasure. Ride it at night and see how the lighting affects things, you can use the lighting emphasize certain scenery like the day ride feels like you are just going underwater seeing all the little fish and then at night you ride and shows the sunken ship and a little area of red and smoke didn't quite see before and it kind of tells a story where a ship was crossing, but then an underwater volcano erupted and caused a tidal wave that capsized the ship or anything else you want riders to focus on and see riding at night.
I honestly don't care how realistic the scenario for the ride is, it's pretty freaking cool. If I could change one thing about it, it would be to have the coaster spiral up the first time you come out of the water - like an inline roll - and then spiral back down. That way when the train crests the hump, the stingray in the front is facing upright rather than being upside-down the whole time. That means the riders would be on their backs. It would br pretty cool to do, and probably pretty cool to see. Other than that, it seems like a fantastically themed ride.
You should add a corkscrew over by where you put the anchor. That would be cool. Shipwreck/submarine/Coral reef, anything else to look at. Glass tube for realism?
Maybe you can add zero-g rolls over the pop-up points, overall, a great ride!!! And can you please do an insane infinity coaster similar to The Smiler at Alton Towers!! Love your content so much!!!
Ollie the shark by the path way looks to wired because you’ve got the roller coaster going up over the path then the shark. Move the shark under the water to make it look better. Like if you want Ollie to do it!
There are places where they use fake water. It's a very thin layer of water looks like a deep one from the top, and under it, it's hollow. So you can say, that the lake is just fake water :D

You could add a sign saying 'You WILL get wet on this ride.' ^^; Olli, you need to add an entrance and exit to the ride, if you didn't on camera, with that excellent rating people will be lining up to ride.
Well done Oli love the planet coaster videos... honestly with ride technology getting so advanced I don't think an underwater coaster is totally out of reach, just need the right engineering
Very good job on the coaster, although one thing missing, maybe try adding some coral around the bottom part of the entrance tunnel where it makes it's first turn just so it's not bare rock.
You need to have at least 2 trains running for the wooden coaster so the line moves slightly quicker. 1 train is not realistic for this size of a coaster
I beleive you can do better on the under water ride. Can you just at least add some more stuff on the ride? Or atleast make those hills into barrel rolls? On the next video, please do what I have just suggested.

Love it! One problem though... The holes where the rollercoaster enters and exists the water haven't got any water in them. Physics says they should!
