Carbonara is probably my favorite pasta dish. I remember the evening my husband proposed to me, as it was on a walk we took after I made him a huge meal of carbonara, but since he didn't have any dried pasta, I made the pasta from scratch in his kitchen. Now, we're expecting our first child in about seven weeks, and I can't wait until the little one is old enough to fall in love with carbonara too.
I love carbonara too, it's really simple but it's packed with so many flavors that my taste buds loves. Thank you for sharing your precious memories with me, I hope you do make carbonara and relive these happy memories you had growing up. Cheers!
Well carbonara is not an old dish and still evolving within italy. Romans tried alot of different stuff earlier like garlic etc before. Alot of good chefs mix pecorino and grana padano or parmigiano aswell.

Excellent video, thank you. I feel like all of the carbonaras were amazing for different reasons. They all had excellent ingredients, kept it simple, but varied slightly in technique. I can't think of another recipe with just five ingredients that can come out so beautifully. Everyone should be making this!

Love your way of presenting basic food as what it is - simply good! Learned from your (and others 😬) to make Carbonara. Whenever I get Guanciale I go for it. I went to Rome in 2015. Directly to the left of the Roman Pantheon (if you are facing it head on) there was this pizza place that had really good square shaped pizza's that they fold and serve to you like a sandwich. The have a very liberal selection of flavours that you wouldn't expect in Italy (but perhaps Rome is more innovative than I'm aware of). I swear one of them was carbonara and it was soooooo delicious. One of the best I've ever had.
Well said. Rome has really perfected their cuisine especially they carbonaras. They are known to have amazing Carbonara dishes that everyone surely loves, the richness and the depth of flavor these pasta dishes have are superb in Rome. Vincenzo, love your videos! I recently made your Carbonara recipe using guanciale from Graziano's grocery in Des Moines, Iowa...my wife is Italian and that's her hometown. It was the best pasta of my life! That said, her family red sauce is the best ever as well. Keep those videos coming! We love you in Kansas City!
Thanks for sharing your experience with the Carbonara recipe and using guanciale from Graziano's grocery! Your wife's family red sauce sounds amazing too. 😋👌 Keep enjoying the videos from Kansas City! 🙌
Vincenzo, your 2023 carbonara looks excellent and, by looks, keeps getting better and better with every new videos you create and upload. Please try Ristorante Abruzzi in Rome (closed Saturdays) near Piazza Dodici Apostoli. In my opinion, it is the quintessential carbonara (made with rigatoni). The guanciale is crispy. The quality is on such a high level that it’s extremely difficult to replicate. My guess is that the restaurant has a secret technique or method that they do not tell the public. I would say every authentic restaurant in Rome has their own secret methods for preparing their own version of carbonara. I myself want to know the secret touch.
You're right, every authentic restaurant in Rome has its own secret touch for carbonara. 🍝😉 It's fascinating to discover different techniques and flavors. I'll definitely check out Ristorante Abruzzi and see if I can uncover some secrets for you. Stay tuned for more delicious recipes!

Don't know if you saw this sir but we are all waiting for you 😂 ruclips.net/user/shortsIA3xzOl7Lw4?feature=share Awesome channel so glad its growing Vincenzo! 🎉
I made my bestie carbonara one night when we were staying at a hotel near Little Italy in San Diego. Limited kitchenette, but sourced my ingerdients from a little Italian market around the corner. Guiancale, spaghetti, eggs, olive oil, parmisana (there was no grater in the room and that's all that was pre-grated in the shop). She LOVED it and took leftovers to work the next day and texted me that it was still awesome. I was winging it and wanted to make something for her to thank her for inviting me on her business trip. So few ingredients, horrible kitchen utensils and cooktop, but beautiful results. 10/10.
When I went to Rome a couple of years ago, I had the best Carbonara in my life. It was a small restaurant, maybe 10 tables at most, hidden in a tiny street. When you walk next to it, you could see an italian Nonna sitting in the front window, literally making all the Pasta by hand! One of the best meals of my life.
I can't wait to see your new Carbonara videos. I made your Mk. 1 and Mk. 2 versions and they were fantastic (2nd one better than the 1st). You didn't visit Luciano Monosilio?
I had one bad Carbonara in Rome, the rest was amazing. Really made me work on my recipe. I've pretty much nailed it. One of my favorites. Great video Vincenzo!!

My pasta cooking has improved so much since I started using your techniques. Just adding the pasta water to the sauce and then the pasta itself (and not having the pasta and sauce separately) has made SO much difference. I also use the whitest pasta I can find here (tastes much better than the caramelized ones) and buy real pecorino which our cheese shop imports from Italy. I haven't had any luck with getting guanciale from our butcher shops yet though, I might need to order online. I can't wait to try the real deal.
Hey there! It's so great to hear that my techniques are helping you improve your pasta cooking skills! Your commitment to finding the best ingredients is key, and it's awesome that you're excited to try guanciale. Can't wait to hear how it turns out! 😊👨🍳
@@vincenzosplate I found real guanciale and used it to cook Carbonara exactly like your "approved by Romans" recipe with the whole eggs. And I must say, wow. Wow wow wow. I didn't think guanciale would make that much of a difference but it does. It has a subtle but very distinct flavour. Everyone loved it! It's quite hard not to burn it though. I found that even on a low heat the fatty part hadn't molten completely before the lean parts started to burn. Luckily I had bought enough guanciale for 2 dishes so I could start again with narrower strips and that worked a lot better. So in the end it all worked out and we had the best carbonara we ever had! Topped it off with your Tiramisu recipe with eggs and real savoiardi biscuits (and some added ricotta for a bit more substance) and we couldn't be happier ♥️♥️
This reminded me to restock on pecorino today. Really wish I had access to the high quality stuff, but even simple stuff from the store does the job for me. For now.
Hey there! Glad to hear you enjoyed the video and that it reminded you to restock on pecorino. Even the simple stuff from the store can still make a delicious dish. 😉👨🍳
VINCENZO!!! Brava, and grazie! My hubby plays piano/organ so well, I like the music to your video, and for dinner, he stuffed his pie hole with Amertriciana style (forgive my spelling) pasta with paperadelle, it was too spicy for me but still a wonderful dish....I prefer creamy pasta HAHA! I love when he gets tomato sauce all over his face! We bought a so sad "parmasean",so weak, I hope to try peccorino sometime! The most painfull appetizer I had to prepare was the tagliere for 2....it took so long, even with my proficiency with a meat slicer!!! I hope you mind your cholesterol after so many dishes! We need you around for more bellisimo videos 😅
Thanks for sharing your experience and enthusiasm! It's great to hear that you and your husband enjoyed the Amatriciana pasta. As for the Parmesan, I suggest trying Pecorino Romano cheese next time. 😉 Keep watching and cooking along with my videos!
What I loved the most aside from the beautiful pasta that I wanted to eat all the way, was the beautiful architecture of that historical city in the background. That city exudes human history in the most elegant and beautiful way.
Hey there! Rome is definitely a must-visit destination for foodies! 🍝🍷 Hope you can make it soon and try all the delicious Italian dishes. Let me know if you need any recommendations. 😉
My mouth is watering! Looks so delicous!!! My dream is to go to Rome and try their AMAZING Carbonara and cacio e pepe etc. Love this video Vincenzo!! I bet its like non other here in Massachusetts.
Wife and I visited the north of Italy a couple of years ago and we played a game: Finding the best carbonnara and the best pizza in italy. After visiting 4 majors cities and a couple of day trips in smaller cities, we arrived at that conclusion: Best carbonnara we had was in Milan in a small restaurant near the Darsena. Best pizza was in Rome in a small pizzeria named Loffredo, very far from the city center, but close to our bed and breakfast. The owner was simply lovely and would grab a glass of wine with us simply to have a chat in the little english he knew.
Cmon, I needed this video half a year ago when i was in Rome but when i am back there i am gonna those restaurant. I guess they have great amatriciana as well right :)
A question: Are there people going to McDonald's if there are so many good restaurants in Roma? Only the tourists who were kicked out off those restaurants after having asked for Ketchup? Thank you very much, Vincenzo, for sharing your wonderful documentary video with us.
Hey there! We all have our preferences, but for those who want to enjoy authentic Italian cuisine, my channel is the right place. I'm glad you enjoyed my video. 🇮🇹🍝
I absolutely love Carbonara ... Luckily, I can get all of the ingredients including Guanciale locally here in Germany ... Now I'm going to try all of the different varients !!!
I will be in Rome next month. Which Restaurants would you recommend for Risotto/Arancini and Pizza? Thank you very much! Unfortunately your Italy program is sold out. I would really love to take part in your tour!
I think something may have got lost in translation. It is carotenoids that make the yolk dark orange. Carotenoids are found in marigold flowers which are commonly fed to chickens in Europe, because of the various health benefits they provide to chickens. They are a source of pyrethrins, which protect the animal from pests. But carotenoids are also found in carrots, so I could be mistaken!
@@vincenzosplate Yeah, when I visit Rome, that’ll be the first place I go! I make it at home but the chickens around here definitely aren’t eating carrots 😂
Let me know, Vincenzo, when you're going to organize a culinary tour to Rome/Italy. My favorite carbonara restaurants in Rome: l'archetto and L'Abruzzo, both are a short walk from the Gregorian University (a 100 yards more or less). Love Rome! Love Italy!
@@vincenzosplate Okay Vincenzo, I'll add that l'Archetto had a particular pasta dish they called "Il bomb", which I enjoyed many times. In the Abruzzo, they offered the very best carbonara I ever tasted. Then I usually would follow up with maialino (?) al forno, baked piglet. You could eat it with a spoon. Now I did invite some American friends visiting in Rome to try it, but they could not stand the sight of the piglet (I made a mistake!). Too bad. We Americans want our food in a McDonald's wrapper. But I can recommend both places to you. There are other magnificent places... Would love to revisit. Italians know how to eat well and inexpensively. Thanks for so much, Vincenzo. I'm here in Maine, New England, and do the best I can to make a carbonara as you teach us in the US. Can't be done with the food I have here in the back woods. But, I am grateful for your coaching. My friends and I enjoy the best carbonara in Maine (using unflavored bacon and parmigiana, the best I can do). But it's nothing like Rome, Italy. Cheers.

I just back form Rome I had a good carbonara in Alla rampa. I cant live without Rome food.....its creazy
That's great to hear! Rome has amazing food 🍝🇮🇹 Have you tried my carbonara recipe? It's authentic and delicious 😋
Even young Sebastian speaks with a Roman accent, so cute and delightful.
Ahahha thank you my friend!
What a treat to follow you on this Carbonara adventure!! I'm still working on mine! So nice to see how creamy it can be! Thanks so much for this video !❤
You are absolutely welcome. Continue to practice and you'll be able to achieve perfection soon!
Don't know if you saw this sir but we are all waiting for you 😂

Awesome channel so glad its growing Vincenzo! 🎉
I'm intrigued with the idea of adding the oil from the guanciale to the egg/pecorino mixture. What a way to add extra flavor!
Thanks for the suggestion 😎👍 It's a classic technique for extra flavor! Have you tried it before?
Vincenzo eating Carbonara for every meal in Rome is what I want to see, bellisimo!
Hahaha thank you Anna 😂 that’s definitely my dream life
I have to go back to Rome and just eat....I can't believe I missed these places.
Maybe next time 😍
@@vincenzosplate Let me know if you ever need someone to carry your bags. Great video.
I love the soup plates, particularly @ Felice. The pastas speak for themselves...
Grazie Vincenzo! Your videos make me love and appreciate life more! Keep trying to perfect your endeavours is a great philosophy always…
Glad you like it. I always make sure to make my content as informative as possible.
I must confess and thank you because at-least 2 of your dishes have become staples in this household: the bolognese and the Carbonara are 👍🏻
I made my bestie carbonara one night when we were staying at a hotel near Little Italy in San Diego. 10/10.
That sounds amazing! It's incredible how even with limited resources you can create something delicious. 🤩👌
What a cute little kid he was!! 🥰🥰
Haha, indeed! That cute little kid grew up to love and cook delicious Italian food! 😄🇮🇹 Thank you for watching and enjoying! 🍝👨🍳
Wow, what an amazing experience! I hope you enjoyed Rome as much as I enjoy sharing traditional Italian recipes with you 🇮🇹👨🍳
@Vincenzo's Plate It was amazing! Thank you so much, I love your videos😊
I can't wait to see your new Carbonara videos. I made your Mk. 1 and Mk. 2 versions and they were fantastic (2nd one better than the 1st). You didn't visit Luciano Monosilio?
Awesome!
I had one bad Carbonara in Rome, the rest was amazing. Really made me work on my recipe. I've pretty much nailed it. One of my favorites. Great video Vincenzo!!
Sounds great! Hope you could share your learning with me too.
Carbonara!!! Best thing for breakfast😍
Carbonara for breakfast? Give me a portion of that please.
@@vincenzosplate will do!!!😋
This is the reason I will visit Rome again.
Such a wonderful place to visit too!
Just from watching an Indian chef make a stunning pizza which am sure you might like and the history that he has given is amazing.get those recipes I want to try to make it
Ahhaha which recipe?
The first one where the chicken eats only carrots
Roma!! The most beautiful city!! It's time I had authentic Roan Carbonara!!
Thanks for your comment! You're absolutely right, Rome is a beautiful city 🇮🇹 And if you want to try authentic Roman Carbonara, then you've come to the right place 😎 Let me know how it turns out!
Amazing video, a usual. Especially loving the fact that the "cream is very creamy"
Thanks for the feedback! Always striving for the creamiest cream 😂 Hope you continue to enjoy my videos! 🙏🏻
@@vincenzosplate always, amico, always. I've learnt so much from them that my daughters say "we don't need to go to Italy to have good pasta now, we have you." So, grazie mille Vicenzo.
superb Video !! V THANKS FROM UK awesome
Thank you for the awesome support! 🙌🇬🇧 It's fantastic to hear that you enjoyed the video from the UK. Stay tuned for more delicious Italian recipes coming your way! 😋🍝
Finally got to make this but had to use pancetta; still it was delicious . Thanks for sharing
Pancetta is a great alternative if you don't have Guanciale readily available. It will still taste fantastic!
The pasta looked so delicious one after the other and the view, how can you top that. Can't wait to see what is next Vincenzo.
Thanks for the support, always great to hear from you! 🙌 Keep watching, there's a lot more to come 😉🍝

These all looked delicious. I'd try any of them.
They are, I hope you'll be able to try them soon!
Sebastian is so cute eating carbonara! 🥰
🥰🥰
Couldn't agree more!
Vincenzo! PLEASE put together a food tour of Italy!! I will BE there! I must go. The food looks amazing, as does the city!
Hey there! Thanks for your comment! You know what, that's actually a great idea, a food tour of Italy would be amazing 🇮🇹🍝🍷 Let's plan it!

@@vincenzosplate YES!!! That would be incredible. I'm am so there.
Those all looked magnificent one, out of curiousity is there a trick they use for the takeaway carbonara so it doesn't stiffen up too swiftly?
No tricks! They just make a great eggs and cheese cream so the pasta doesn’t stick
Awesome episode. That Ginger kid was so cool too. i think you need to watch out, because he may surpass you one day!
I'm sure he will! ahha
I’ve always wanted to travel to Rome. Hoping to be able to make the trip in the next couple years

My mother always made her carbonara in a mixing bowl as well. It wasn't until i saw videos on RUclips that i ever saw the pasta put into the pan!

My mouth is watering! Looks so delicous!!! My dream is to go to Rome and try their AMAZING Carbonara and cacio e pepe etc. Love this video Vincenzo!! I bet its like non other here in Massachusetts.
Its truly a one of a kind experience, it is worth every penny. Glad you like this video, I hope someday you get to visit Rome too!
Hungry now!!! Thx!!!!
Hope you enjoy!
The pizza gets better as you go south. Carbonara is truly a Roman thing. My favorite city in the north for food is definitely Bologna.
What an amazing experience, thank you for sharing these information with me, I'll definitely note all of this. 🥰🤣
Cmon, I needed this video half a year ago when i was in Rome but when i am back there i am gonna those restaurant. I guess they have great amatriciana as well right :)
Aahhaha sorry, but this will be useful if you're gonna go back to Rome!
Just watching this is making me hungry! Off to the kitchen to make some carbonara using your recipe or course, Vincenzo!

Thank you for sharing.
A pleasure, as always! Have you ever made Carbonara? 😋
@@vincenzosplate no but this is going to be my next dish to do
I think something may have got lost in translation.
Hey, thank you for sharing this information with us! It's always great to learn something new. 🤓🍅🐔🥕
Another common trick in Europe (or at least Greece) is to add red peppers to the chicken feed for pretty much the same reason
Loved the slight differences and the desire to serve a good product. Now, I have to stay in Rome an extra day!🎉
Thanks for your comment, I'm thrilled to hear you enjoyed the recipe! 🤗 Have a great time in Rome, it's such a beautiful city!
My Lord, that first place with the orange cream looks amazing
Hey there! I'm glad you liked the look of that dish. It's definitely one of my personal favorites 😉👌🏻
Love Rome! Love Italy!
Thanks for sharing your favorite carbonara restaurants in Rome! I'll definitely check them out when I'm there next 🇮🇹🍝
Cheers.
