    INGREDIENTS
    1 lb (450g) lamb leg, cut to 3/2-inch (1.5-cm) cubes
    1 tablespoon soy sauce
    1 tablespoon Shaoxing wine (or dry sherry)
    1/2 teaspoon salt
    1/4 cup cornstarch
    Spice mix
    2 tablespoons cumin powder
    2 teaspoons Sichuan chili flakes (or Korean chili flakes)
    1/2 teaspoon sugar
    (Optional) 1/4 teaspoon freshly ground Sichuan peppercorns
    Stir fry
    4 tablespoons peanut oil (or vegetable oil)
    1/2 cup dried Chinese chili peppers
    1 small white onion, large diced
    1 thumb ginger, minced
    5 cloves garlic, sliced
    1 cup chopped cilantro
    (Optional) Toasted sesame seeds for garnish

    I just made this and it was incredible! Thanks!
    The only change I made was using thinly sliced lamb instead of cubes because I live in Japan and that’s what they had at the supermarket.
    The cornstarch coated meat tended to stick to the frying pan. I cooked one piece at a time and kept moving it around to overcome this.

    Thank you so much for the recipe. Your version is my favourite. I am addicted it this dish. I omitted the wine as I don't take alcohol. Is there any good substitute for it?

      Adding the wine helps eliminate the gamy taste of the lamb and add some umami, but it's OK to simply omit it.

    I've made this a couple times with tofu instead of lamb, it's great. One question: Are you supposed to eat the dried chili peppers, or do they just add flavor to the dish? I tried to eat them whole, but they're a bit tough to chew and swallow lol.

      Soak the dried chilli in boiled water for 15 minutes first

    If it’s Xinjiang dish, why add cooking wine? Most Xinjiang people don’t consume alcohol or add alcohol to their dish.

      Most Xinjiang dishes wouldn't but dishes like this one has been so popular and it traveled to many different regions, and the preparing method changes. I'm from Beijing and we tend to use some Shaoxing wine. Because it adds depth of flavor to the dish, and it eliminate the gamey taste of the lamb.

      Most of Xinjiang dishes are made of halal meat, which doesn’t have a grassy/blood odor. Cooking wine helps to remove that smell from non-halal meat, as well as ginger.

      Chinese Muslims don't add wine and still tastes good.
