My ex guineana wife was born in Yaounde and they make this like every 3 4 days. We do about the same as yours but we don't use ginger but use more maggi and those white cameroonian peppercorn ( not sure what the proper name) but the concept is nearly the same. You see this on the table as condiment. We keep a container of puree onion and garlic just for make our condiment. Cameroonian foods is the best , I lived in Malabo and the local foods really sucks compared to when I 1st visited Douala and Yaounde.

William Thompson hey, I believe it should be able to last for up to 6 weeks. What you can also do it once you’ve made the big batch, reduce half and keep in the fridge, then keep the rest in the freezer, that way it will last even longer! I hope I helped 😊

butlan01 hello! You can add it in food, if you want the food to be spicy, or you can put it on the side of fish, chicken or whatever that it is that you want to eat it with.. It’s the same as hot sauce, you add it to food, or put it on the side and eat. It’s up to you how you want to use it.

I'm sure this probably tastes good, but I grew up in Yaounde and Dakar (12 years between the two) and never had basil in my pepper sauce (pili pili in certain parts of Cameroon) ..Ginger I would say is atypical.. It could happen because of the asian influence in Cameroon, but I never ate much ginger living there. I'm half trini, I suggest trying leaving out the curry powder, switch out your basil for culantro aka shadon/chadon beni. Might be hard to find... I'm guessing you're in the USA? Never heard a Cameroonian say, "I'm going to go ahead and.."etc. Please keep sharing videos, I miss the taste of home, looking forward to your ideas!
Metoobie I really appreciate your feedback! But cooking is all about exploring new techniques and INGRIDIENTS that work for you. If you grew up using only the same spices and Ingridients that your parents used, then unfortunately you didn’t learn anything new about cooking. And just because my parents didn’t use certain ingredients in certain dishes doesn’t mean I shouldn’t.. Again cooking is all about exploring what works for you and not what worked for others!.. Lol and I’m sure you haven’t met every Cameroonian to know how we all talk!
Ginger is a pretty typical spice used in Cameroonian food. It's been used well before any Asian influence, not that there really is a strong influence to begin with.
We don't add ginger in Senegal and Gambia. That gives it a totally different taste. I'm sorry but I had to change channels when I saw curry powder coming out. This is not African.
