Yes, it was not easy days, I am not gonna lie because I took working holidays, so just finished my shifts and flew to Copenhagen, however, it was so totally worth it. When we know why we do what we do - it gets million times easier and honestly it was a pure pleasure to spend some time with the team, their willingness to share everything stunned me, I wish more people were like them. Thank you for you €🖤, appreciate it a lot :)
Andersen & Maillard is one of my fav bakeries in the city, the one in Nordhavn is even better than in Nørrebro, because it is just right by the water. Love their coffee croissant!
yes exactly, I loved watching people just going with their bathrobes and slippers straight from the flat and jumping into water, so so cool! 😃 in general loved how people are chilled in Denmark, it also made me feel close to my roots and home - food, weather, nature... left heartbroken. happy to hear you love their work, I loved it too!☺️ thanks for your comment!
This is my dream life. I know everything is not roses and rainbows, and being a baker itself has its sacrifices (very early hours etc.). But baking and Denmark... this is the life I want. Hi Kris, I have been watching your videos for a long time now as I find them very interesting. I am a cook who always wanted to be a baker... Selftaught I now make and sell organic sourdough bread, sourdough croissants and danish pastries. The different breads and laminated dough I developed myself after a lot of try outs, until I was happy with the results. I wanted to ask how long does the crispiness of those croissants and danish that we see in the videos last? Mine tend to soften by the next day and warming them up does the trick.

It was really really good, light and rich at the same time :) What I meant with glazing was that we don’t put too much glazing on the whole bun, there is no needd, the goal is to make the chocolate part more shiny:)

Hoping you or someone can answer this question for me. The danish pastries use frozen custard in the video, everywhere I read online it says do not freeze custard. Is there anything you do to make it freezeable or is it one of those old myths and reality is you can freeze custard fine?
Yes that's what it's called around Helsingborg (other side of the ferry from Helsingør). Usually it has almond paste filling. But can also have the sugar&butter filling. @KrisKazlauskaite

In my country, Bulgaria the most popular bakery, actually The National food is one bakery with white cheese called Banica! from the looks my favourite is the chocolate bun. it looks so elegant :) though I didn't understand, how you managed to only glaze the chocolate parts? :)
It was really really good, light and rich at the same time :)
What I meant with glazing was that we don’t put too much glazing on the whole bun, there is no needd, the goal is to make the chocolate part more shiny:)

Hey, not for everything, some recipes don’t work with sourdough. Most commonly fresh yeast are used for making dough.:)

Hoping you or someone can answer this question for me. The danish pastries use frozen custard in the video, everywhere I read online it says do not freeze custard. Is there anything you do to make it freezeable or is it one of those old myths and reality is you can freeze custard fine?
I wouldn't freeze and purpose it for an immediate use, it's ok to freeze (make shapes for example) and then bake it. 😇

In my country, Bulgaria the most popular bakery, actually The National food is one bakery with white cheese called Banica!
Many Craftmanship Masters like you sacrificed their sleep and start at 4am to prepare Banica for breakfast, and we can buy it every day going to work or school. 😊
