  • I'm answering another question I get asked all the time...
    How far in advance do you make your cake decorations?
    It all depends on a few factors. In this video, I will show you some pictures of cakes I made and let you know how many days in advance I make them.
    I will also let you know how far in advance you CAN make them if you prefer to make them far in advance!

    All phenomenal tips! I agree wholeheartedly with drying on a dummy, ohhh those cracks are heartbreaking 💔. One thing I do when I’m pressed for time, is put fondant decorations in the oven with just the light on. Do NOT turn the oven on. But if your decorations are on a cutting board or a cookie sheet, put them in there and turn the light on. They will dry solid just overnight.

      Nope! I started selling them and improved along the way. I didn't charge as much as I do now. As my skill level increased, so did my prices!

    If I am pressed for time, what I do is that I take my fondant cut out and I turn it around (the back side) and I put melted white chocolate on the back of it so that it's solidifies and holds the shape of the decoration firmly.

      @@maggieburris1081 I haven't had any issues with decorations less than 1/4 inch thick. I'll try with a thick decoration and let you know.

      I used to go to a pizza place and just buy a couple of new pizza boxes and store my fondant shapes in them!

    Do you ever use modeling chocolate? This is great if you want something to firm up quick! Pop in fridge and boom 10 minutes later it’s hard, great if you can’t be super organized ahead of time. Bag of melted candy melts mixed with 1/4 cup white corn syrup.

      I've made it once. I'm so used to working with fondant that I just stick with that. How does the modeling chocolate hold up in the heat?

      @@KarolynsKakes I actually mix it with fondant so it’s half and half, it holds up fine same as icing would.

    Hi Carolyn, I love your videos and tips you share that’s very kind of you! I’d to now if you give clases or you already have a tutorial about to how prepare a cake before applying the fondant to the cake, what’s the best icing you can recommend based on of the years of experience with making cakes, like is it better to use ganache or buttercream before putting the fondant on top.. I love to make cakes with fondant but I’m still learning and have lots to learn

      I've always used American Buttercream under my fondant. I have been working with it for so long that I'm used to it and that's just my preferred method. I personally find ganache a little too messy, more costly, and more time consuming. I will use ganache if I'm asked, and I do charge accordingly!

      I usually bake on Friday the week before it's due. So today is Friday the 9th and today I baked cakes for the weekend of Feb 16-18.

    Hi Karolyn, maybe you addressed this in another video, but can you go more in depth on preventing collapses? I’m having trouble with the weight of fondant decorations. Especially when laid on the edge of a cake.
    Also, are you #TeamBlack or #TeamGreen? 😂

      @@KarolynsKakesAwesome! I will try that with the toothpicks jutting out next time. I think I’ll chill the cakes longer too so the “spackling” of icing on the back will adhere to buttercream.
      I’m fairly sure my biggest mistake on the particular cake I’m thinking of just could not support the weight of the Unicorn mane which was just so heavy and unevenly distributed. I’ll have to figure out a way to make those lighter.
      And yes! Team Black is the only correct answer 😂

    I live in a warmer climate area. My gum paste stays wet and tacky. I do not have air conditioning. How do I dry the gum paste of fondant affectively without air-conditioning?

      I put mine in the oven on a cooling rack with just the oven light on. Only the light. It works! Especially when it rains.

    Hello I'm new here and have seen older videos.i recently bought an edible printer 2 days ago.Im having trouble with my pink and purple color just isn't right.Someone suggested I use different ink instead of what came with the printer.Do you have any suggestions on the best quality edible ink to use.Thank you

      I've been using Icing Images products since I started and I love them! The magenta is always a little difficult and gets clogged faster than the other ones. I'd recommend getting the Power Max print head cleaner along with the ink cartridges. Here's my link to their site!

    When you started baking. Did you wait until you we're really good at it decorating and all before you started selling cakes? I been baking since 2017 but I kept stopping so last year 2023 I kept going but I want to work with Fondant. I make my own buttercream, cream cheese and whipping frosting

    Could I ask , how long the fondant decorations last? So could I make them 2 weeks in advance?

      There are some fondant decorations you can make way in advance, like number toppers or crowns, which have to set hard and stand on their own. If you want the fondant decorations to stay pliable (so they contour to the shape of the cake), those need to be made closer to when you're going to put them on the cake so they don't dry out. I store those in ziplock bags to keep them pliable, but they only stay good for about 4-5 days or so.

    Hi if I have 2 8 x 3 round cake pans how many cake mixes will I need? How long do you cook them for ? Thank you

      You'll most likely need 2 batches of the batter. I only bake in 2" high pans. When I bake 8" cakes, it's usually around 45 minutes, but it could be different depending on your oven. I'd start checking around 45 minutes!

    Making standup ears for a cake, can I make them a week in advance? If so, how do you keep them? In an airtight container, just wrapped and set on the counter?? Thanks in advance 😊

      Like Mickey ears? You could make those a week in advance. Leave them out at room temp if you want them to get really hard. If you want them to stay pliable, keep them in an airtight container!
