Thanksgiving was a bust . By the time I made the families junk food- turkey, green bean casserole etc. I was too pooped . So I made a 3 sec cranberry fresh plant based chutney kinda recipe and sweet potatoes for myself and my special needs kiddo. That is NOT happening for Christmas. I will be serving the pretty and yummy stuff on the table for us and their junk food will be the ugly stuff😂👍. Thanks so much for great videos.
Oh gosh do I feel you! I made a full meal for the whole family just to forget about myself. I did remember to pull some potatoes out before adding the butter and milk but then didn’t even take the time to actually make mashed for me. I just ate cold boiled potatoes. I was going to make myself a main dish with beans and didn’t get the chance to do that. So, after everyone was already eating I tossed a frozen vegan turkey breast in the air fryer (which I was trying to avoid) and ate that with my sides. For Christmas I am definitely putting myself on the nice list and being sure I don’t get left in the dust.
soooooo true guys! I make these simple, yummy, and beautiful plant-based meals for myself (with A LOT of inspiration from Kiki and Hannah) hoping that my family will come and join me with plant-based eating. No luck. I also made the 'traditional' Thanksgiving meal with the favorite recipes for the family, and was then too pooped to make me something different. Kiki- you are a genius!!! I am really looking forward to trying these. I would have never thought to make a vegan cheese ball that way and it looks absolutely delicious! The little sandwiches remind me so much of many times I used to take my son to high tea around the holidays but unfortunately most of the items contained cheese. What a wonderful alternative! I bet you could fill a multi level tray with items like this to have a wonderful high tea experience!!!

I didn't end up being able to make the crostini but I did make the brie and OMG it is so good! I didn't think I could like it more than your regular cheese sauce but I do!! I think this will be my new weekly recipe, I'll just halve the amount of cashews so it's the same as the other cheese recipe. Happy New Year!! 🥰
