I live around the corner from Interstellar and used to go there often, but since they were “discovered” the line goes out the door and keeps going. Great BBQ, but now one heck of a wait.
seriously I remember walking in at 3pm and able to still get a good selection of food, with zero line
I remember going there and you could show up 20 minutes before it opened and be within the first 20 people getting in line. How times have changed!
Literally just back from Austin and went to Terry Blacks, Franklins and KG. KG BBQ is incredible.

I really thought that these episodes would be Sunday uploads. I'm still here on a Wednesday afternoon for Harry and Joe's barbecue review!
Harry I live in belfast and butchers are getting very creative with sausages. It isn't just your run of the mill pork or beef or cumberland etc.... they are creating all sorts of different flavour sausages so GET THAT DOWN YER NECK.
I mean this is man that didn't know Dijon mustard was sold in supermarkets, so his scope on sausages being severely limited is not really supprising
Yeah, I know proper good quality butchers are sadly a dying breed, but.....find a good one, and you get great varieties like handmade pork, apple and sage or Yorkshire tomato sausages. There's too many to mention here!!
Got a great butcher just down the road from me (Surrey), he does all kinds of sausages. Even has a blackboard outside each day with that days specialty flavors, stuff like curry, cheddar, etc.
When in the UK Joe declared he doesn't like eating outside but I don't hear him complaining now!!

Seeing the transformation of these two over the years is just amazing and hilarious. Harry has gone from the sensible straight man of the duo to a wacky, over-enthusiastic puppy whilst Joe has gone from a happy, sunny guy to just become more and more cheeky, sarcastic and slightly cynical. Both are so much better and funnier now and are great for this kind of content where they can bounce off each other.
Man I actually love the idea of a US BBQ tour. I'm hoping they also hit up Kansas City, St Louis, and the Carolinas.

Nice selection of Austin joints, though Lexington is like a third of the way to Houston. I love all of those places. You did good! I'm all about the pork steak and the sausages at Snow's. That pork steak is meat candy. The way the juices sputter off the coals and it ends up with that caramelized crust is so good. Last time I went, we showed up at 3:30am and were still like #30 in line. Hopefully it's not as bad these days. Nice to see Clay in his usual spot at the offset smokers.

Loved Harry's shirt, bit of nostalgia my late mom who worked with designers all over the world, made my son ( her only grandchild) a rooster shirt similar to his. Reminds me of a time was alive. Oh with regards to the BBQ, mom was a Texan and a butcher for 20 years, until she decided to follow her dream of fashion. I love interstellar.

Original Blacks BBQ south of Austin is my all time favorite. Great BBQ. Their Turkey shows you they know what they are doing. I always got their smoked whole chicken on Sundays.

Native Texan here. The brisket is tough to cook, and the ranchers would give that cut to the Cowboys, who perfected it, most likely with some Mexican influence from Barbacoa , which is also cooked low and slow. I’m sure the Ashkenazi Jew story bringing it over from Europe is true on the E Coast, but not sure that happened in Texas.
Also, the sausage influence in Texas was the German/Czech influence in central Texas.

Interstellar BBQ is my favorite here in town. The pork belly is fantastic as are their pork ribs. The smoked scalloped potatoes aren't something anyone else does. Stiles Switch and then LeRoy & Lewis BBQ round out my top three.
Stiles main location is underrated for how good it is

Check out 225° Urban Smoke in San Antonio, Texas, one of the best places imo. Not sure about other Texans, but always called our sweet tea southern sweet tea. Seeing these is making miss home. Thanks for the fun times and reminders.
As far as cornbread, I'd say we eat it more with home cooked meals, like some pinto beans made with ham hocks, or more homestyle restaurants. Always enjoyed puting a decent amount of butter in with it as well.

@@wallbreaker_9358yeah, would love to see it, lived there for a year, and to this day, one of my favorite places I've ever lived. Used always love going to the 24/7 Mexican restaurant Mama Margie's, especially after the gym.
@@wallbreaker_9358well, the way my dad made it, I make it too. You always want to add the sugar while it's hot, so it melts in perfectly for a good mixture. Plus, getting the right amount of tea bags to sugar and water ratio down, and steeping is a huge plus that my dad taught me. Been making like him for 20+ years now and it's always the best imo. I had a friend from Cali growing up that hated sweet tea until he tried mine lol. Some places outside of Texas, even in Texas sadly, will give you unsweetened tea with ice in it and expect you to put sugar in it, which completely sucks because it's grainy sense the sugar won't break down. Hope that helps explain it well enough. I usually use 3 of the large liston tea bags, low boil for about 15 to 20 mins so the bags don't break, then let it steep covered in the pot for about 45 mins to 1 hr, adding the sugar right after I turn off the heat. I like to do a cup and 1/4 of sugar for 1 gallon of tea made this way.

Austin the best bbq city in the world and there really isn't even anything that comes close.
Interstellar is AMAZING. It is a very close 2nd to Goldee's and I woudln't argue with anyone who said they thought it was better. The pork belly was the best thing we had that day. They also had pulled lamb instead of the duck. The lamb was out of this world, pun intended, and a very nice twist on traditional bbq.
Franklin isn't the best BBQ overall anymore but it is still by far the best brisket you can get.
There aren't the words to describe how jealous I am of these two and their jobs.
I need to go back to Austin. Much easier that smoking it myself. Franklin's knows the pork ribs are fall off the bone overcooked but that's what the patrons want.

I did a bbq tour…..i like Texas bbq in the east better then Austin. I still preferred Kansas City bbq better by just a little bit. North Carolina dissapointed because i kept getting dryish pork when whole hog i was expecting juicy. Though my favorite style of bbq sauces were there. St. Louis/Memphis were ok. Chicago south side bbq was surprisingly good but still B level. Alabama chicken (did not like the sauce), Oklahoma being so close to Texas was sooooooo not good. Arkansas was underrated but still not Texas level.
Franklin has fallen behind the newcomers like Interstellar, Truth and Goldies. Just look at the presentation. Few visible spices, dull colors. They need to literally spice things up.

La Barbecue is consistently the best brisket. Beats Franklin's 8 days out of 10. Terry Black's brisket is low flavor washed out trash, that's why the guy says it reminds him of steak, there is a reason they weren't allowed to keep the family name no matter what the PR line is. I mean it's a fine steak flavor but one of the worst briskets, because they bought such a great location it's a major tourist and downtown tech bro spot and it's sad that it's becoming a popular brisket spot as it's ruining our cities bbq reputation. It's a shame La Barbecue has had so much tragedy lately.

As an Austin native, born & raised in atx.... I have to say, I'm a bit disappointed. Y'all went to the new trendy spots & not the real local Austin spots and surrounding areas. Best BBQ you'll get is 10 min outside of Austin in Manor & I was hoping that y'all would give those places a try vs the new places that are owned by non-natives. :(

I saw Mr.H and friend video on him smoking brisket. He toured Texas and learned how to smoke brisket here in Texas, and also has Franklin’s offset smoker there in UK. And he smoked it perfect with the nice bark and smoke rings. Only thing off was the fact that brisket sucks there cause y’all’s cattle is grass fed and it’s all lean meat. That’s according to that British guy
