    One of my favorite soups is Avgolemono, a Greek egg lemon orzo soup. It is light tasting, gets raves and made with only four ingredients. It literally couldn't be easier to make.
    So when I was on the hunt for a healthier, lighter chicken dish with tons of flavor, obviously the gears started spinning in my head and the answer was right in front of my silly face. I would turn this magnificent soup into a delightful sauce for the perfect chicken dish - done so simply in the Instant Pot!

    We made this tonight with rice instead of orzo thanks to covid/small town Walmart. It was wonderful. Same 1/3 cup. It was impressive to have played on a serving dish when my in-laws dropped by.
    I doubled up on my egg and lemon juice (2 eggs and 2 lemons instead of just 1) and added a little bit of zest. Amazing!! Thanks Jeffery!

    This recipe will be on my menu this week 👍 Looks amazing! I love avgolemono, and have been making it for a while, and I have a tiny little suggestion. Please temper your eggs before adding them to the mixture. You add a little bit of the hot broth to the eggs, mixing the eggs with each addition until they’re the same temp as the broth. If you add the eggs straight into the hot broth, they might congeal and that would not be good. Add the lemon juice to the egg broth mixture and combine it just before pouring everything back into the hot pot. But this recipe looks straight up delicious, and I can’t wait to try it! 😋

    When dredging chicken, keep your hands separate...one hand picks up the wet chicken the other dredges in the flower. I learned this in a cooking class. Keeps your fingers from getting all gooey with flower...or less gooey ;)

      Michael Rizzo this is one of those things that sounds better on paper than practicality. Fully dredging a slice of chicken on both sides with one hand is a chore. It’s worth the messy two hands for quicker and more even dredging.

    every recipe off this hannell is a huge hit. concidering I live with two people who make their living cooking says tons about the level they expect. They don't like soup though, just rarely and this channel has soups I would die for and want to try but any more than once a week i'll get heat. this is perfect, taking what you make as soup and turning it into a chicken dish I will get away with serving everyones wishes. after the lemon sausage linguini I forsee the lemon orzo chicken in the near future. thankyou for turning me into a goddess in this house of fussy men.

      BTW the two cooks aren't ALL my guys. I serve anyone hungry and have 2 other guys living here. so every day I have 4 guys minimum but I've been known to feed a dozen more times than you'd think.

    My daughter was visiting from Arizona this weekend and I decided to make this recipe. She helped me make it Saturday evening. We all loved it although we thought the chicken could have used a little more seasoning. We had enough leftovers to each have a serving last night for dinner! YUM! Hmm, what's next? Perhaps Italian Wedding Soup, which is one of my husband's favorite soups. Thanks, Jeff!

    As usual, a spectacular dish! Your creativity and imaginings about combining good existing recipes to make a new ones for the IP is a great model for new cooks. Just a few add-on ideas:
    - "Dredge" the chicken by putting the flour coating in a gallon-size Ziploc. Toss all the chicken in 30 seconds. Remove to plate. Much faster, easier, and neater. You also use less flour and ingredients.
    - Add another handful of spinach. Really adds more flavor for no extra cost or effort.
    - Add the zest of the lemon you squeezed for the juice to the sauce. Really enlivens and more closely imitates the original Greek recipe.
    As an aside, I bought a Mealthy CrisperLid (which fits BOTH my 6 and 8 quart IPs) and by far it is the BEST accessory for those of us not going to buy a new IP or Foodi for the multiple benefits of the multi-use lid. If you have one, please incorporate into one of your upcoming RUclips segments, if that's kosher... If you don't have one, it has my full, unpaid, IP addict's endorsement! Thanks, kid!!

    I made this for my family for dinner tonight and it was amazing!! I actually doubled the spinach and doubled the orzo in the sauce and topped the chicken with it as sort of a side dish as well… one of my favs!! Thank you Jeffrey!

    Omg just made this today, it’s is fooking amazing!!!! I added raw spinach to platter where I plated. Next time I will add way more spinach or i will sautée some spinach for a side. It is outrageous!!!! I can sit by the pot and eat it. Orzo was perfect I needed a little more sauce because I added more orzo. Really this is really healthy. Omit cheese because flavor is still amazing. Thanks sooooo much!!!!

    i am in love with your channel. already have dinners planned for the next 2 nights.. but Sunday im so making this. btw your pot roast recipe with the portobello mushrooms is absolutely to die for. my mother is 80 and has never eaten anything that resembles gravy on anything. i call it mushroom sauce for her benefit lol, and she inhales it.

    Made it tonight and it was delicious. Only had tenders. They were great in it. Served it over pasta. I’ll bet Jeffrey could tell us how to add pasta to the pot and cook it all together.

    Can I curse on you tube? Holy sh**t. This was truly a fabulous recipe. Didn’t have the fresh spinach on hand so I steamed broccoli (a family favorite). It was pretty spectacular. Will this be in your book? It’s a keeper. Holy sh**t!!!!

    Tonight's dinner. Using the recipe from the Lighter Cookbook (Blue!) but re-watching the video for technique. Wife has had a tough week and avgolemono is her favorite soup, so this should cheer her.

      @ Crafty Creations , i like 2 sides with this , 1st = a fresh greek salad & i like simple with the greens of your choice as i prefer romaine, sliced red onions, kalamato olives( pitted) pepperoncinis, fresh grated feta, greek olive oil & vinegar dressing, with sea salt/fresh cracked black pepper. 2nd = the thinnest asparagus spears you can find & cut the bottom woody stems off. brush a mixture of unsalted butter mixed with greek olive oil, 50/50 mix , & sprinkle on Lawry's garlic salt to taste on all sides( Lawry's only as is the best) grill or pan fry, 2 excellent sides with this dish my friend.
