      Brown Butter Peach Cake
      Ingredients:
      For the Bottom:
      100g of butter
      100g of brown sugar
      4-5 peaches, sliced
      For the Cake Batter:
      3 eggs
      1 cup/200g granulated sugar
      ¾ cup/165 ml vegetable oil
      ¼ cup/60g yoghurt
      1 tsp vanilla
      1 ¼ cup/165g flour
      Directions
      1. In a small saucepan, melt butter until foaming and amber. It may sputter and pop, that is normal. Pour it into an oven dish, with all that yummy burnt bits, then add the sugar and mix well. Arrange the peach slices in a single layer over sugar.
      2. In a large mixing bowl, combine the eggs and sugar. Add the oil, yoghurt, extract, and flour. Gently, pour the batter over the peaces and bake it a 165C for about 30-35 minutes. Let it cool for a couple of minutes, add a plate over the dish and carefully, with oven mits on, flip it upside down. Slice and enjoy!
