From 1:47-2:08, can someone clarify what Gordon is trying to say? From my understanding, is Gordon saying that yes he does want to continue being behind the stove at 60/70 years old? Or he wants to allow the younger chefs to take his place? I'm just a little confused...

We can clear this up for you - no problem! Gordon was saying that he doesn't want to be cooking behind the stove in his 60s/70s. He's happy to hand the reins to younger chefs, like Matt Abé (who appears in this vid). Hope that helps! :)

You do know he ran this restaurant since 1999
He ran that restaurant at the beginning,he was behind the stove when the restaurant was awarded 3 stars for the first time and being voted as the 2nd best restaurant in the world behind French laundry,and he still keeps a close eye on this restaurant because this restaurant is his baby,and by saying that by the way,it's almost like saying Pierre gagnaire or Alain Ducasse or any other multiple stars chefs owners aren't 3 Michelin star chef just because they are not behind the stove every time

Gabriel Martins his name is on the door because he’s the founder, owner, and patron of the restaurant. He’s the reason behind its world renowned reputation and its 3 Michelin stars. What do you mean he’s no longer the captain? At the end of the day, every decision affecting the restaurant goes through him and he has the final say. Cmon dude. Really? 1: Its his restaurant branch he created... He's been humble and given the opportunity to run the place to his younger employee who he admires. 2: Its an interview... of course a chef would wear a chef jacket for an interview in his own restaurant. Its professionalism
