  • Quick Chicken Yakhni Pulao. Ramadan series.
    Marinate 1 kg chicken with 1 tbsp ginger garlic and chilly paste and salt.
    Heat 4 tbsp oil
    Add 2 bayleaves
    1 tsp cumin
    1 star anise
    2 black cardamom
    5 green cardamom
    4 cloves
    4 black pepper corns
    2 stick cinnamon
    3 green chillies
    Few curry leaves
    2 sliced onions
    2 potatoes
    Fry
    1 tbsp ginger garlic and chilly paste
    1 tomato
    1 tbsp corriander pwd
    1 tbsp saunf pwd
    1 tsp black pepper
    1 tbsp cumin pwd
    1 tsp garam masala or everest biryani masala
    1 tsp kasuri methi
    Add marinated chicken
    1/2 cup curd
    Mix well
    Cook for few mins
    Add 4 cups of hot water
    Salt
    Boil
    Add 2 cups of rice soaked in water for 1 hour
    Cook till water dries off
    Add fried onions
    Corriander and mint leaves
    Heat 1 tbsp ghee (you can add more)
    Add few curry leaves (jeera optional)
    Add over the pulao
    1 tsp kewra water
    Place a tawa on flame and pot on tawa
    Cook on dum for 15 to 20 mins.
    Serve hot.
