For what it's worth, it takes me about 4 minutes to make meringue after removing from the double boiler. The baking mats look like the standard half-size mats. And standard (not thick) teflon sheets.

@@trinilove13 Yes, not all teflon sheets are alike. You need the shiny plastic-looking ones. I got tripped up buying them as well. It's the PTFE ones you want to look for. The first ones I bought weren't PTFE and I didn't get smooth bottoms and the cookies didn't release well. The 2nd ones I bought were PTFE teflon sheets and they did the job except - EXCEPT - they were thicker than average. They even said it in the description. And I couldn't see the template underneath. My own fault. I have some new ones I'll try the next time I make macs. That's about as much as I know on the subject, but I don't think Sugar Bean can point you to the good ones. They can't be hard to find, though, as all these South Korean macaron bakers use them. Maybe someone else can point out an Amazon.com link for them.

The times to heat depend on the oven. Unless you have the same as hers, your times will be different. And probably greater.

I’m a total beginner so this might be a silly question but why do some piping bags need that white thingy holding the tip and others don’t?
So you can change the tip that is in the piping bag (sorry for my english xd)
