So I ended up making this roller but a little more versatile. I used bolts, steel brackets, washers and wing nuts to adjust the height. Instead of a PVC pipe I used system that allows the top bracket to be removed and a rolling pin to be inserted and removed for easier cleaning. My stainless steel rolling pin has no flex so the thickness of the dough is always the same. I also cut out a thin stainless steel sheet and glued it to the rolling surface. My device is now 100% food safe and it cost me under $40 AUD to build it. Thanks for the inspiration, I have saved so many hours because of my roller!

The way the slab moves was the biggest challenge for me that you just solved with this video. I would have gone with a gear roller system and wasted a lot of time. This will serve me well.

Bravo for trying to come up with a simple mechanism that works. I have been looking for something similar, simple and not like those rather expensive machinery on the market. Something that would replace opening/flattening the though by hand, mostly for pita bread making. Good job! keep on improving it:)

Brilliant transit mechanism, but would suggest you clean up the roller before you start manufacturing your patties. You might consider wrapping it in a urethane sheet. I would also add to the travel of your dough. Thanks for sharing this! Doug

I am curious, when you turn the crank, I understand why the board moves. It looks like the roller also rolls, even when it's not rolling something and doesn't seem to be touching anything. Is it somehow connected to the crank?

Best design I've seen. This allows you to cut shapes straight off the surface rather than picking up the dough. I need this in my life.
