Best eggplant rice I've ever eaten! Try making eggplant rice like this at home! Tips for seasoning 😉
eggplant rice
ingredient :
2 eggplants
1 cup non-glutinous rice
1 cup glutinous rice
1/2 green onion
a little red pepper
5 tablespoons soy sauce
1 teaspoon chilli powder
1 tablespoon garlic
1 teaspoon sesame salt
2 tablespoons sesame oil
1. Wash 1 cup of non-glutinous rice and 1 cup of glutinous rice and soak them for 15-20 minutes.
2. Remove the stem of the eggplant, cut it in half, and then cut it thickly.
3. Cut the green onion into pieces.
4. Chop the red pepper into small pieces.
5. Heat 1 tablespoon of perilla oil in a pan, add eggplant and stir-fry.
6. Add 1 tablespoon of soy sauce and 1 tablespoon of garlic and stir-fry the eggplant until it dies.
7. In a thick bottom, drizzle 1 tablespoon of sesame oil, add soaked rice and stir-fry.
8. Fry the rice until it becomes transparent, then put the eggplant on top and pour water (600ml).
9. When it starts to boil, reduce the heat from medium to low for 10 minutes and steam for 5 minutes.
10. Add 4 tablespoons of soy sauce 1 teaspoon of green onion and red pepper powder 1 teaspoon of sesame salt and 1 tablespoon of sesame oil to make the sauce.
