Using a heavy cleaver, slice the root from the garlic, crush using the flat side of the cleaver with a firm push, the garlic skin will come off in one piece, put it back on the chopping board and slam the flat side of the cleaver down hard on to the garlic - crushed garlic. Hold the cleaver handle in the same position you would hold a bicycle handle with your right hand with the blade pointing down but instead of gripping with your whole hand just grip with your fingers, rest your left hand on the far end of the cleaver's spine and use as a pivot as you move your right hand up and down, forward and backward, mincing the garlic.

I picked up a 4 inch cleaver knife for $9 at an Asian grocery three years ago and haven't stopped using it since. In fact, I picked up a 3 inch version, too. They're cheap, made from stainless steel and they take and KEEP and edge like no other knife I've used. A few swipes on a sharpening stone and they're as good as new and razor sharp! Once a westerner gets over the ideas stuck in their mind about cutlery, one adapts to find this cleaver type knife is far more useful than just any ordinary chef's knife. I love mine, and give them out as XMas presents every year.

Vodge Nicoli It's actually not called CCK Rhino, that's probably just a name CKTG gave it because it looks like a rhino horn. The "Rhino" is KF2205 and the "Little Rhino" is KF2206. Also yes they are using a Chinese cleaver but they are Korean.
My wife and I are American and we were at a flea market in Vancouver Canada about 6 months ago. I bought this cleaver for $10.00 Canadian. It was dull but I sharpened it up and you are right. It's my favorite knife/tool in the kitchen now.
When I worked in custom beef processing I used the backside of the knife frequently. Pretty common to break soft bones while using a hook in the other hand.

Good job, but I like a variety of knives in the kitchen although I own four cleavers! Couldn't function without my chef knives and boning knife. We buy a lot of whole beef and pork tenderloins, so the boning knife is a must. Unless I'm chopping a lot of product for a big family dinner ( cleaver used) I'll usually grab my 8"or 10" chef knife for onions, mushrooms, celery and peppers. For carving roasts or foul I have two carving knives 8" &12". Utility and paring as well as filet knives. Although the cleavers are great for some things, the rest mentioned above are really needed as well!

I was going to buy something to chop with, I got sick of sharpening my knife and spending so much time mincing. I bought one and love love love it. Wanted to get some tips and this video was really good. p.s. I really like things minced and love the scooping power of the cleaver. It looks awkward but after you use it half-dozen times, it is very natural feeling.

I'm someone who LOVES chinese restaurant style Chow Mein. The kind I'm referring to is served totally vegetable free, is soft/moist, but would qualify as dry....definitely not prepared wet. It's buffet style so you can eat all you want. Where we live (in British Columbia, Canada) they top th Chow Mein with a tiny bit of (canned I think, it's not breast meat) chicken or possibly ham. You can add soya sauce and/or some bright red sweet/sour sauce...which is also used for boneless chicken balls. Vegetables are available but are served in a separate dish with dark sauce. Along with that we often get delicious sliced breaded almond chicken., fried won ton, fish balls, potato wedges, and fried rice, and small vegetable pancakes (can't recall name) with optional gravy. Occasionally Almond Gai Din. Plus there is always crispy chicken wings. The dishes vary from time to time. A small bowl for Won Ton soup (with large won ball shaped won ton) also come with the meal. It's heaven, but i can't afford to eat there because live on a disability. I need to know what kind/style of noodles they use to get the results they do. Do they steam the noodles? Is that how it comes out :"dry" but moist and tender? The Kwan family (very friendly) has run the restaurant for 40 years! Their little daughter used to get up on a stool and ring our bill into the cash register - when she was very little. She now runs the place.

Key is to either stir-fry wet noodle in small amount of oil to get rid of the moisture, or fry noodle first then steam afterwards.
I just bought one of these knives at a Chinese store, looks like a made a good purchase. Mine is Roumeizi, it looks really nice too.

Im curious how does one peel with this knife. Or how is peeling done in chinese kitchen where just this knife is.
you have to use a peeler or smaller knife to peel skins of fruit like apple. This knife is great for banging garlic skin off.
