Flax eggs would definitely cause this cake to sink, since chicken eggs also provide structure. I hope it still tastes good! Flax eggs usually work best for a recipe that only calls for 1 egg, like cookies. (Or they can also work with all purpose flour, since gluten also provides structure.)
You could cut the recipe in half and bake it in one 8-inch pan. Or, bake the whole recipe in a 9-inch square pan for a thicker cake. This is a small cake . How about making an 8 inch cake , the standard size !I am hoping to make it but have to order smaller tins .Otherwise I can use the 8 inch tins and have 2 layers .
Could it be due to old baking soda? That, paired with the eggs, helps this cake rise. Or try using double the amount of baking powder (so 1 1/2 teaspoons) for a similar lift.
