Hey guys in this video I’ll show how to make Kilishi, Nigerian Beef Jerky
Here are the ingredient’s you will need for about 1 wafer thin pieces of kilishi:
1 teaspoon cloves
3 cloves of garlic (the small pieces from the bulb)
A small piece of ginger
1 small stock cube
¼ teaspoon salt
1 teaspoon cayenne pepper seeds
1 tablespoon suya spice
First, cut off all the fat from the beef. And rub some salt on it like this. You only need a tiny quantity and you can skip salt altogether.
Line your oven tray with a baking sheet and lay the pieces of beef flat on it.
Bake in a preheated oven at 250 deg C (F) for 15 minutes. If your oven has a fan, turn it on as well because it helps dry the beef.
Flip the pieces of meat after every 5 minutes.
While that is drying up, we prepare the seasoning and spices.
Grind the cloves with a dry mill. Pound the ginger and garlic and transfer to a bowl. Add the cloves then add some water, stir and add the stock cubes. Pass everything through a sieve.
Add the cayenne pepper seeds and the suya spice. Stir very well and set aside.
After 15 minutes, bring out the beef from the oven and rub the kilishi spice solution them.
Put back in the oven for 10 to 15 minutes. Remember to flip them from time to time.
It is done when it looks like this.
Traditionally, kilishi is dried under the sun’s intense heat for about 3 days but now, you’ve seen how to make it in your kitchen in under an hour.

You can slice meat wafer thin by freezing it for about 30mins to 1hr and then using a sharp knife to cut it into wafer thin slices.

No kilishi can be like the real kilishi from Nigeria
This was the first thing that I tried out while in Nigeria. I thank God for that experience.
Onye nkem, I had no idea that Kilishi is usually sun dried. I guess heat is heat regardless of the source. I prefer the oven method though. Ndewoo for sharing.😙
+Chichichikito nne m, under the sun ooo, that's how they do it. They dry if for some days then soak it in the spice solution and continue drying. For the second stage some dry it with open fires. The kind of hot sun in Ugwu Awusa no be for here. :)xxx

Thank you for the recipe but can the meat be marinated and can peanuts be added to the sauce?
Yes, you can marinate the beef. The Suya Pepper mix (one of the ingredients) already contains peanuts (kuli kuli). Watch this video to see me make suya pepper >> ruclips.net/video/sWwam2mtpUY/видео.html
But if you do not have suya pepper, yes you can add peanuts because it is very important for the traditional taste of kilishi.
