in north we don’t use uda and alligator pepper, we use kulli kulli , cayenne pepper, masoro( black pepper) ginger maggi and salt, its the proportion that makes it taste different, and everyone keeps it a secret, we call it yaji
Thank you!! I followed your directions and felt like I was back In Lagos after 30 years away. It was my wife’s first time eating Suya and now she wants me to make it every week. Outstanding video! ❤

Now this woman can cook cook , am going to Nigeria for Christmas with hubby, am eating this every day and everything else I can't wait we'll deal with weight gain when am back 🤣🤣
Looks so good 👍. Quick tip for the alligator pepper/uda, Try to beat it and remove d seed before use. It doesn't make it bitter that way. D seed is what makes it bitter.
Love your recipe. 2nd time using it this year. I found the thinnest beef cut is shaved beef. Very thin and you don't need to tenderize as much. I also used peanut and vegetable oil.
Once I saw the Uda and ehuru I almost cried. Where will I get it here? The recipe looks delicious!! I have given up on trying to imitate the aboki flavor, now I just want suya that tastes amazing! I love your recipes. They're always a hit! You're amazing Sisi Jemimah, thanks for always delivering content. The moment I lay my hands on those two, I'll be trying this recipe. Without the kuli kuli of course, I've never been a fan.
@@agaemar thank you so much! I'm in Dallas, so I'll check the stores here and see, I've just never seen it on the shelves, maybe because I didn't look. I'll even see if they have the kuli kili just for the heck of it. Maybe I might like it. Thank you!
@@victoriaosuagwu5979 You’re welcome dear. I drive about an hr from my home to the African store at least once a month. Last time I was there , I found IRU, Pap and Suya spice that I’m going to use after watching this video. I’m still waiting to find Udara one day. 🤤
Last month i had the pleasure of tasting egusi, tapalia and jollof from and place in Chi-town . I was impressed. to a point now i want to try more NIgerian cuisine, that's how I came across your video. I'm going to try to make suya and egusi. I'm South African and must say. I will let you know how it turns out . I have a NIgerian friend who will tell me if its good or not. He took me to the place in Chi-town I trust he's taste buds.
As a young bachelor I’ve been able to make jollof, egusi and stew from your tutorials which has helped me save a lot of money that I would have spent ordering food. I want to try this recipe but to be honest i hate going to the market to get stuff. What if I use already made Suya spice. Will that taste good?
Well done, but i must say; As a Hausa person you shouldnt use any cut of meat you like. We hausa named it suya because of the cut of meat used, we have other variations of suya such as Balango, kilishi and soo on... which vary in taste, based on the cut of meat we use and the style in which we finish it. Generally everyone refer to our grilled/smoked meats as suya, but true every Hausa person knows the differences and our secrete ingredient is kwulikwuli, as we eat a lot of spices and peanuts and you're supposed to use the peanut oil. We out spice in everything. Even in all our drinks. 😂
Omgoodness this suya is so inviting and mouthwatering, am already salivating, perfectly seasoned with the spices, final result is deliciousness and well garnished gorgeous sis 😋👍🏾
I've just discovered this today and I've watched nearly all your videos SisiJemimah. I love your explanations. It's so thorough and on point... Making me hungry with every single video lol

Do u also use groundnut oil instead of other oils?
Thanks for the top. I'll try that. 😊
Thanks for the secret ingredient 😋
I think some people add white Maggie

I'll try this using firewood. The aboki one is spectacular as it is partly because of that organic taste.

I learnt that the seeds are what gives udah the bitter taste so, you are good to go if you get rid of the seeds.

Did you use the bake or broil?
Looks good. 2 questions please
1) Where would you suggest in America to buy the ingredients?
2) where’d did you buy the grinder?
Thank you
Thanks. You'll get the spices from African stores. The grinder is a coffee grinder rom Amazon.
The spices are also available on Ebay, well, seen them on EbayUK...
