    1. Roasting of tomatoes and others
    2. Don’t grill hard chicken (I am guilty of this and always wonder why they are usually harder afterwards, oh my goodness 🤦‍♀️🙆‍♀️)
    3. Adding onions and others in the oil before frying
    4. Splatter guard (was wondering what that thing is called and why use it - there, you called the name and explained).

    I’ve researched countless _authentic_ African cooking channels & none were convincing … until I saw THIS! 😮‍💨 Hoooo, she has my tastes, a chef after my own heart-not afraid to FRY; not afraid of SPICY peppers; and not afraid of OIL! 👏👏
    This is the FIRST African dish I’m making, and she’s right: it looks BEAUTIFUL!! As soon as I learn to make GREAT JOLLOF (hopefully from HER ☝️), my crystal ball shows me the best fall/winter dish EVER! 👌🤟👍👍👍

    Thanks Sisi Jemimah!! I did it and it came out perfect! While roasting the Tomatoes/Peppers I sprinkled some salt and bullion powder to them. Oh boy! I actually ate some after I was done roasting. 😅😅 Everything came out perfect! For those who complained about too much oil, u will need that much oil trust me. Else, your tomatoes/Peppers ain’t gonna fry. I started with moderate oil, before I knew I had to pour more than enough oil inside cuz the paste was splashing all over the place since the oil wasn’t enough. During frying since there was less to moderate oil, the thick paste boiled and splashed oil over (Splatter Screen was not helpful under such circumstances). So the best option is go with a lot of oil and drain it out once u done. Exactly what I did. After draining the oil out, it looked like I had had moderate oil inside from the beginning... That roasted Aroma is fire 🔥...

      Oh, so more oil prevents splashing? My stew was splashing like a water fountain and it infuriated me so much!

    That's a great tip about the garlic there. No need sweating each garlic to remove the papery skin. Your videos are always so enlightening. I save them them in my Nigerian food play list. Thanks for bringing extraordinary into the ordinary.

    Just wanted to say that I'm African American and really enjoy seeing how many dishes are made. I noticed most of the videos I watched and am recommended were Asian foods. So I searched Nigerian foods for a start, since I wanted to diversify what I watch. This chicken stew looks soooo AMAZING and I cannot wait to cook it someday!!!

      Yeah that’s not a normal amount of oil 😭 it tastes perfectly fine without 5 in of oil floating on top, just a little to make sure the Pan isn’t dry

      You need that oil for flavor. Remove the excess oil after cooking.

      @@amiyaeoh1140 one tablespoon of oil is 120calories, there is literally litres of oil in that stew even after she removed some. This is one the single most unhealthiest things Ive ever seen

    I made it twice and came out delicious- only thing I did different is I used palm oil to fry the chicken- delicious, Thank you! I’m so happy! Oh and I ate it with pounded yam 😋

    Thanks so much for this recipe SisiJemimah! It was sumptuous. I used guinea fowl and followed the rest….Never tasted a better stew in my 60+ years on earth . I added two pieces of my leftover stock fish from the Afang soup recipe . It was delicious 🤩

    Nice tip on freezing for future use. Love that you roast the veg. Infusing the frying oil was very much also a chef touch. It has to be said you have an understanding of flavours . Well done chef!! I am currently making this in my kitchen now , already smells great.

    Really loved this video..I now see why I should use a lot of oil in my stew because when I cook it's always splashing all over the cooker. Now I remove the excess oil after cooking and keep it to make jollof rice. Thanks ma'am 🙏

    In trinidad we brown sugar to carmelize chicken then we stew.but its interesting to see other people cook.sometimes it adds a different swing to a great recipe.but we eat with beans rice vor roti perfect meal.always nice to see a different spin on other peoples ways of cooking

    I have a similar recipe but minus the tomato and too much oil. Instead, I add European Dijon mustard which is sour enough and adds another layer of flavor and aroma. It is great!
