Excellent video. The only discrepancy is you received a pig illegally 56:19. Per rules: Pigs reproduce more quickly than other animals. This means that if you own at least two pigs, you take a new pig every “Animal Breeding” phase. The pig tiles don’t have a “pregnant” side. Horses breed following the rules for cows and sheep.
I’m really glad you posted this video. I’m brand new to the hobby. Started with Hadrian’s Wall, and I’ve been confused/conflicted about my next purchase. Information overload. This play-through has convinced me, though, that this game is The One. Thanks!

If you come back this game (solo), I suggest playing occupations for 4 points (the first 2) and more for 3 points. "Whenever you have the opportunity to play an occupation card, you can instead discard that card in order to take one available victory point token." Also: horses. They are 6 points each. Breed them for a boost to your score.

I think whether you can place your silver or not after income on the last round did not matter for you (and wouldn't for most players I'd reckon) even if there were minus 2 spots to cover as you could have easily moved things around to cover up those minus 2 spots while still earning the income you earned. But taking the rules as read, I'd argue that you are not able to do this as page 23 of the base game's rule book on end of game and scoring states "do not pay out the income of the final round; instead, write it down in the "Final Income" category of the scoring pad." And in the Norwegian expansions rule book, it states that scoring works the same way as the base game.
Respectfully, the official ruling by the game designer, posted on the forums on BoardGameGeek.com, is that each player can choose to EITHER take their income in the final round as hacksilver pieces OR just write it down on the scorepad. In the base game, it only made sense to just write it down, since there were only ever just -1 spots, so covering them with a hacksilver made no difference. However, as you mentioned, with the expansions came the addition of new islands that had -2 spots on them. If a player didn't cover them with tiles during the game, or if they didn't have enough hacksilver pieces to do it before that Final Income phase, they'd need to collect that final bit of hacksilver to get that done before the scoring phase. Remember, players ARE NOT allowed to move tiles around to a better position on the boards after they've placed them and moved on with the game. It's a tough rule, but it rewards players who plan ahead better and enhances replayability ("I know I can do better next time!")
