    I've never see before this particular kind of sushi, is it uncommon?

      Not as common as nigiri or rolled sushi, but I find some restaurants selling oshizushi even in US too. Mostly in Japanese owned restaurants, I guess.

      It's mackerel, salted and then soaked in vinegar. Very good! Very easy to make at home, but a lot of work taking out the bones :-)

    why the fuck would you do this backwards. What do you think those slots in the wood are for???
