This puts me at ease. I thought my wine is bad because of sour taste

Ha I never thought of that but acidic does sound barbaric! I happen to love it in wines...I am an acid freak! Nebbiolo, Riesling, Champagne are all for me. I can detect acidity in wine by how much it makes my mouth water. The more pucker and mouth watering, the more acid!

Dini Vino great! You should try Gavi in white and certain Sangiovese

In my case acidity is something I can’t stand in wine. Sometimes it causes me heartburn and sometimes it tastes like the acid reflux that got into the mouth.

Try some wine from the Vinho Verde region of Portugal. Aromatic, very crisp white wines. Very specialized on this. Go for Loureiro, Alvarinho or Trajadura. The most stable and used wines in the region. You also have red wine, which will knock you off your socks. Vinhão, Alvarinhão or Espadeira, would be two of the main grape types.

Some wines give me some sort of pinching feeling on my tongue, like soda or sparkling water. But the wine definately stopped fermenting so it's not that. I always thought it's the acidity but apparently it isn't that either. Can someone help me understand what that is?

Tannens, possibly? If you eat the peel off a grape, does it give you the same feeling?

Im a little late here but it could be the CO2 thats still trapped in the wine, not all of it gets released during fermentation and it would explain the soda feeling on your tongue
