    💑 About Hercules Candy
    Hercules Candy has been on Steve’s side of the family since 1910(ish). When he took over in the 70’s, he anticipated after 10 years of hard work, he could move the business out of the basement and into a real storefront. Unfortunately, it took until 2018 for that to happen, but hey at least it happened! Steve and Terry own the shop, Craig (the social media manager) is their son, Cara (wrapper and shipper extraordinaire who is poised to take over the shop one day) is their daughter and Leah (who doesn’t love being on camera and is very elusive) is their oldest daughter.     My favourite part is the brushing of the creams after sifting, it's so satisfying how quickly the colour pops out of the whiteness😁

    I have been watching y’all since the very last year y’all were in the basement and I still love every video. I did go back and watch all the videos up to the last year in the basement and not a day goes by that when I see the notification that y’all put up a new video I still get excited to watch.     I am enjoying the new members, Cooper’s excitement and knowledge is contagious. I like the videos where Scott is the camera guy bc his questions are genuine and I love his voice when he learns something new….. BUT this video when Craig laughs takes me home 💕 have to go rewatch some old no egg videos .

    English woman here: Boxing Day is traditionally the day when household staff/servants got their Christmas boxes. It’s also known as st Stephens day as referred to in “good king Wenceslas”.

    Karo corn syrup pours... It's what I grew up on when making candy.... The fact that it comes in buckets and you can pick it up with your hand fascinates me every time I watch y'all do it.

    Craig is correct, Boxing Day is the day after Christmas. Thanksgiving is on the second Monday in October 🇨🇦.

    CHOCOLATE GRATING TIP!! If you dont do this already, put the grater flat on the table and grate towards yourself. Much easier on the arms and shoulders and you get more pull. If you're worried about the face down grater scratching your stainless steel, put a cloth or a cutting board down. Hope it helps!

    Cooper is getting very comfortable with the camera being WAY TOO close (Craig). I appreciate the camera angles and the intrusive filming (also Craig) 😄

    Brittle is delish… I think I am a traditionalist and like peanut the best… we would make small home batches with my dad at Christmas when we were growing up :). My adult daughter loved the box of turtles and I ate part of a big turtle…mmmm. Haven’t tried the other candies yet bc they are for Easter.

    So, I love your vids! When people ask why don't you pour it, they are probably thinking of Karo Corn Syrup. It is pourable corn syrup.

    Every time I see this pic for this video I think the creams are goldfish crackers. I love all the videos so much. I watch every day. I wish I lived nearer because I would ask for a job. It seems like a work place that would be a lot of fun.

    As a candy maker it's still odd to see tapioca added bare handed rather than just pouring it or using spatula for assistance. Just a table higher than the pot, bucket does have a yellow pour assist. You get a good rhythm and make alot.

    Why not get a electric grater? I worked at a restaurant that had a commercial cheese grater that had multiple head for shredded and course and fine grated settings

      Probably not much of a taste difference because corn starxh doesn't have much flavor to begin with. And there would have room really be a lot for the chocolate to not cover it

    Could keep the corn syrup in the freezer and then scoop it out instead of handling it? I know it won't freeze solid but just become a harder gel...according to my good friend Google

    Why do you use corn starch for the molds rather than flour or powdered sugar?

      I'd be willing to bet that it's because cornstarch is the least hygroscopic of all the food-grade starches, meaning it doesn't absorb moisture from the atmosphere and won't get sticky/clumpy like sugar and flour can. Sugar is particularly hygroscopic, so even though it's a logical contender flavor-wise, it would make the outsides of the candy tacky and difficult to coat.

    I assume y'all recycle the used corn syrup buckets, with how many you go through? How do you deal with that?

      There’s a video that posted within last 6 months showing how starch is removed and disposed and refill starch into container.

    I was disappointed in my last order...my very cherry cremes we're grainy,not like the 1st order I purchased.And the pecan brittle wasn't buttery like you guys said.

      It's very hot liquid and if u pour it fast it may splash onto someone and cause a very bad burn and it's a waste of syrup if its spilled.

    How many different starch pattern moulds do you guys got. Is it hard changing the molds around.

    I didn't use Siri very much other than while driving until I figured out that I can set and end timers hands free so I don't have to interrupt a messy task to wash/dry my hands or remove gloves before handling my phone. I also find it amusingly ominous to ask "how much time is left?"
