    Helen, I married a Hungarian man 14 years ago. His mother made beigli every year. After her death I knew I had to learn to help keep his Christmas Traditions alive for him and our children. I re-watch this video every year to remind myself of the process. He looks forward to the beigli and batyu every holiday. He even bought me all three of your cookbooks a few years ago. They have been well used. Thank you so much for your videos. In the absence of my mother-in-law, your videos have helped my husband enjoy traditional Hungarian food. Merry Christmas!!!

    Helen, watching your video was like watching my mom and grandma - both from Hungary. This year I will surprise my mom with a loaf of poppy seed and walnut loaf... thanks for reminding me of the great memories I had when they made it.

    I can say from experience. This woman knows her stuff. I've made Hungarian Walnut Rolls for years but it wasn't til I found her that I knew what I was doing wrong. Everytime I follow her instructions, the rolls come out perfect. The only thing I do different is the filling. I use a cup of boiling milk with butter and sugar (and of course ground walnuts) for my filling. My Granmom used to make these but when she passed on, nobody had the recipe. It was all just stuff they knew how to do without writing it down. So, if you want a full proof way to make these...this is it.

    I was friends with a nice Hungarian family in my teenager years and I learned how to make these rolls. This recipe is very accurate to what I remember. When I run into a bakery that makes these, I always order a slice. It brings back memories. Now, I grew Hungarian poppy seeds in my garden in a very large patch to harvest the seeds. I will store and save my seeds to make this recipe.

    It's yummy. I'm glad to see there are people out there who preserve cultural recipe's that have been handed down for generations. I eat lots of Hungarian dishes, I even grow the peppers to make the Hungarian paprika. The paprikash, the goolash and the homemade dumplings are all yummy. You try a bowl of bean goolash (lima beans/beef and you will be stuffed to the gills on one bowl.
    There are things in Hungarian cooking that will make or break the flavor of the food... (1) you have to use the right type of paprika and (2) you have to saute the onions and spice the meat when it's raw before you sear the flavor into the meat.

Yes, in Hungary there are many fantastic recipes and our spices and cooking method makes it memorable. I happy to see that you also cook Hungarian dishes and take the trouble to grow your own Hungarian peppers, which is actually not really trouble but pleasure.     Thanks so much for the easy to follow recipe- I made both rolls the other night and they came out delicious! The poppy seed roll did open and leak out a bit but I didn't let that stop me from eating it! I am not Hungarian myself but shared the rolls with a Hungarian colleague and he was astounded and said it was delicious! Thanks again, love your recipes!

    I grew up in a town called Wallington, NJ. There were a lot of Polish folks who lived there. I lived next door to My Home Place where they made pirogies (sp?) and on Thursday - poppy seed bread. I have searched for a recipe that would duplicate this wonderful childhood memory and this one is the closest. Thank you.     Thank you so much for making this video. My grandmother used to make these each Christmas and I began making them years ago but I always had the problem of my filling seeping out-after watching your video I realize that I need to pinch the ends as I roll the loafs. I can't wait to begin baking my Christmas nutrolls this weekend.

    Mmmmm! Brings back memories of my grandparents baking during Christmas holidays when I was little girl. I plan to do these recipes during these holidays. I just need to know where to get poppyseed. They lived in upstate Pa. I live outside Phila. Grandma's walnut rolls were to die for too! Can't wait! Thanks soooo much!

    Thank you so much for this wonderful recipe. This is one f my favourite Hungarian desserts from growing up. My mom moved back to Hungary from Toronto over 17 years ago and each time she visits I always ask her to make this. I would have never tried to make this on my own until I found your recipe and video. It is exactly how I remember it growing up. Thank you very much for posting this video. Merry Christmas :) Éva

    Hello Helen! I found your video and I'm so happy to watch this recipe! .My father was hungarian and I have relatives in Budapest, so I love hungarian cuisine! And you are so sweet explaining in your video that remind me my family! I made beiglis many times with the recipe that I have, the taste is good but the problem is when I bake it, the dough brokes up. My recipe has 200 gr of butter for 540 gr of flour, 1 egg and 2/3 cups of sour cream, milk and yeast, a pinch of salt and a little sugar. I think it is too much butter in it. I'll try to make your recipe. Thanks for sharing!!!

    Dear Helen,
    thank you for your wonderful video on poppy bread. I have been fans of poppy seed for long time and finally we build up courage to try it on our own. However, we have 2 very pressing questions for you:
    1). Having followed your instructions to the dot, our dough didn't rise as needed. It didn't double its size. We mixed dry yeast into warm milk with 2 tea spoons of sugar. It rose there by ~20% but once mixed in the bigger bowl with flour, egg and milk - it refused to comply.

    my Grandma made the nutrolls for Christmas and a meat dish called ponenia (sic) and a sweet cheese ball she strained through cheese cloth at Easter. That woman could cook God rest her soul. Thanks for the video.

    My grandma would always make this at easter and christmas, along with kiflis, but she has gotten old and cannot make these things for us anymore. My mom makes these things as well, but not as religiously. Cant wait to make it for them now!

    hi again,
    I made beigli today and I had so many problems.
    1- the milk mixture with yeast was not foamy as yours. I warmed up one cup of milk with 1tsp sugar and then after I thought the milk is warm enough I removed from stove and added 2tsp yeast to it. mix it and cover it for 5 minutes, but at the end of 5 minutes still not foamy as yours. how long do I have to warm up the milk? 3 minutes or 5 minutes? Thanks

    My mother's recipe has sour cream in the dough. Wondering how to incorporate it in this recipe. Maybe replace the sweet cream with the sour cream? All I know is it's delicious :)

    2- when I mix the flour with all ingredients the mixture was sticky and hard to mix everything. do you think the flour was not enough. I put 2 cup flour, and I added little bit flour to get rid of sticky but still sticky. what is the problem here?

    2) We cannot find in NJ any good poppy seed mill/grinder. How can otherwise one grind poppy. Once I tried a coffee mill, but it came out as a dry powder. It didn't taste good at all. I do not want to buy a specific device just for this activity. Can I substitute with something handy?

    Quick question on the poppy seed and walnut rolls. I love the taste and so does everyone at work but: Why do the split at the sides and then a lot of my filling escapes not all but a lot. I made them again tonight and the same thing they split on the one side. Please HELP!!!!!!!...LOL

    3- I've been waiting for my dough to rise about 1 hour and 35 minutes. I already put the dough on top of the warm stove while the oven is on (350F). but no luck at all. the dough did not rise at all. is it because of my milk mixture with yeast?
    i'm going to continue and make it anyway even I have problem with sticky dough. But please I need your advise and help for the next time. Thank you so much and have a great weekend!

    Hello, I've been baking bejgli for a few years now as my Hungarian mother in law has passed away. Can you tell me why it opens up right down the middle, it still taste great but doesn't look very nice

      +Gaye Major Thank you for your question. The only thing I can think of is that the Beigli didn't rest long enough or that it was too cold and the filling perhaps too hot and when it hits the hot oven it splits. Perhaps you can follow my video as a trial and see if it still splits. Please let me know if it worked. Have fun baking and Have a Merry Christmas

    I'm once again trying to make my grannys "nubread". I never was lucky enough to watch her make it and she has long since passed. I had found a recipe in her things which must have been what she based it from but whenever I make it the bread part of it is dryer and more "holey" than hers was and separates from the nut filling. hers resembles your greatly so I am trying once again using some modifications.
    her filling was just a nut honey sugar milk and egg mix. she always said she was Austrian ....

      Hello, Thank you for your question and comment. If you follow my recipe on the video you will end up with a great Walnut Roll. Hungarians and Austrians make it the same way as far as I know. However I do not put egg or honey in the walnut mixture. If you do so it will make it very dry, and you don't want that. Give my recipe a try and let me know how it turned out.     Hi Helen, I have 2 questions for you:
    1- how much lemon zest you add to your flour mixture in the beginning? and rapid rise yeast (Fleischmann's) is same as dry yeast?
    2- when you flatten the dough what kind of oil you used? I did not get that. can I use just unsalted butter to brush the dough?
    3- before you put the braided egg bread in the oven do you brush it with yolk egg? I did not hear that in your video.

    hey i keep making poppy seed rolls, but whenever i bake them they break open!! :(
    I bake at 410* F for 20mins. any help?

    Are you using Metric or Imperial measurements? Also what is a pack of vanilla sugar?

      +Blossom McGill Hi, Thank you for your question. I am using metric measurements and the milk is about 250 ml. Vanilla sugar is sugar with vanilla extract. You can make your own by following my video ruclips.net/video/h6ngNJwl6uE/видео.html You can use vanilla sugar in your pastries, cakes, cookies, making ice cream any time your recipe calls for vanilla.     I never have had much luck making kolache, but now that I've seen your video I'm ready to give it another go. But I can't understand what you're saying near the end, what is it you are brushing on the dough prior to the nut filling? Oil? And then later, are you brushing it with a beaten egg or a beaten egg yolk? Thanks in advance. Karen

      Hi, thank you for your question. Sorry I'm couple of days late, but I was away. I am brushing the rolled out dough, prior to filling it with grape seed oil, but any vegetable oil is suitable. At the end I am brushing it with the following - 1 egg yolk + 1 tbsp. of cold water. Whisk together and brush. I am it will turn out great. Take care, Helen

      THANK YOU! I did finally figure out the grape seed oil and brushed with an egg yolk but didn't add water. I did make 2 and they turned out the best I've ever made. This is now my go to recipe. I think its much the same as Kolache. Can I fill it with fruit as often seen with Kolache? Any tips on doing it that way? Oh thank you so very much. My hubby is of Polish/Slovak decent so anything that takes him down memory lane is much appreciated.

      Yes, you may fill them with fruit, but you need to cook the fruit with a little sugar until it becomes a jam consistency. You may also fill it with sweet cottage cheese (sugar, vanilla sugar, cottage cheese, raisins, lemon zest, lemon juice). Good luck and have fun baking.

When I use a cup to measure, I use a 200 ml cup. So if I use 3 cups of ground walnuts that means 3 x 200 ml. I hope this helped, have fun baking.

    My full-blooded Hungarian grandmother (R.I.P., Maw-Maw) made the walnut beigli every Christmas (and also mini ones called kiflis, I believe). Boy, have I missed them. I need to be brave and try to make them myself one day.
    As far as I know though, she never used raisins. Can I get by without them?

The original recipe calls for it as it makes the filling moist, but you may leave it out. It is so nice to hear that this recipe brought back the memories of Christmas with your beloved Grandmother.     Here in the States it is IMPOSSIBLE to find fresh ground poppy seed. Do you have any suggestion how to grind the poppy seeds? Thanks, Vivian

    I used well two cups of flour and added a mix of warm milk (as hot as a dipped finger can comfortably tolerate) with 2 tsp of sugar and 0.25 oz (7g) of Fleishmann's ActiveDry Yeast The mix was set aside for 5 min and rose and bubbled somewhat. I mixed it into the flour and egg and set it on the top of my stove which was off, however there were some pots with hot soup. Did I use too little yest, or where seems to be a problem. I repeated the process twice and my dough never rose :-(.

    1 or 2 lemons total? The dough has zest of one lemon and the filling has the juice? Or is there zest+juice from one lemon in filling and zest of another lemon in dough? thx.

      Hi, thank you for your question. The zest of a lemon goes into the dough. There is no juice in the dough. You put the juice of 1/2 lemon into the walnut mix and the juice of 1/2 lemon into the poppy seed mix. So, you use 1 lemon. You may also put some lemon zest into the walnut and the poppy seed mix as well, but that's optional. If you do you will need another lemon, but only the zest. I hope this helped. Have fun baking.
