We don't often see okra here in MB either, but I did spy some in a Save On in the city (say THAT 5 times fast!) so I'm tempted to try this one. As for bacon fat, my Ma always had a small 1-cup crock in the fridge for bacon fat and used it rather than butter. I happened to see an identical crock years ago so I also keep that crock in the fridge for all our bacon fat. Such a beautiful flavour addition. Thanks, you two. Your videos always brighten my day!

Protip: Fry down a little dab of anchovy paste until well-browned before adding any other ingredients. It’ll add a ton of depth to a dish like this, and it won’t taste fishy, especially with all the acidic ingredients being added.

I’m a sixth generation Texan so I can boast at having eaten a lot of okra and tomato dishes from multiple cooks. Your additional ingredients aren’t traditional and that’s alright but you left out one that IS TRADITIONAL........a pinch of sugar, which came from the German settlers.
