  • In this video, I'm Smoking Ribs Individually, or as some call them "Party Ribs". This is something I've been wanting to try for a while. I always thought that smoking ribs individually would provide more flavor, and boy was I right!

    I have cooked them that way and I think those are the best way to cook them. Party ribs.

    Whatever you want to call these ribs I've been doing them like this for around 20 years..
    I use whole spare ribs and I might trim a little bit of fat but for the most part I just cut them up into single bones and I cook all the meat there is even them and pieces people throw away and I just throw them on my charcoal grill in a pile and rotate them every half hour and I cook them probably two and a half or 3 hours depending on when they are done and I can put any flavor profile I want on them depending on if it's just for me or for a party or whatever but it's pretty much the only way I do ribs now

      This is an excellent way to cook up some ribs. Adds a lot of extra surface area to hold flavor.

    I recently move my smoke to the back porch. I put a large piece of cardboard down to catch the drippings. Do you have any suggestions?

    Nice job on video.
    I have done pork ribs on the rotisserie + full rack in smoker which are great but these individual ribs are a whole different world of flavor.
    All sides get barked up + they cook in a short time.

    That's a great idea. I've done 2 or 3 ribs at a time, but never done gone all the way and done them separately. I'm doing beef short ribs Tuesday or Wednesday, but with luck a rack of pork ribs this weekend.

      I got this unit over the Brunswick because the Brunswick was sold out. I think they are boat good units though.
      I have heard of several problems with the Brunswick though. You never know.

    I will have to give this a try! I had thought about taking a Boston butt and cutting it into quarters, seasoning those separately and then smoking to see if I might get more bark and flavor.

    Another great video but I have a question. Why did you put the sliver pan at the bottom this time? Just to catch the grease?

      I had it filled with water. So it serves a 3 fold purpose. Increases moisture in the chamber, helps regulate temp, and also catches grease.
      I will usually put in a second water pan when I have a lot of protein on the smoker.
