They will playback you just need to verify your ATV supports 1080p - some devices only support 720p HD video. If you have older devices you'll need to download the lower resolution version of iTunes Extras.
Very true - redownloading is an easy thing - unless its the 10GB Avatar one :) - I wonder how hard it would be to write a nice GUI app that makes copying iTunes Extra files to iOS devices easy? - I'd think there is a market for some OS X developer to capitalize on Apple's hard to use Extras
This video is a bit dated - iTunes Extras are done in a different format to support iOS devices and the new Apple TV - I believe the content is streamed now rather than available as a download

Yea - I think TV show is the best way to go - you could make em music videos and create playlists or albums.

If you add the files to iTunes on your Mac or Windows computer it will be available in the Home Share area - AirPlay also works

Are iTunes Extras now supported on iPads? I'm on iOS 8 beta and I'm still not seeing it as possible ... please share your workaround
