Your values of being cheap/affordable when needed, fresh ingredients, rich sauces, etc resonates with my way of thinking, especially the frugal aspect with simple and delicious meals. This is the best cooking channel that I've seen outside of Italy (and it can compete well also with italian cooking channels). I am just a random italian, but to me you look really skilled and you seem to have two important skills for a cook that wants to make italian dishes: knowledge and respect for the ingredients. In italian cuisine you need few ingredients masterfully combined, and you do it. Finally, you love what you do, you approach italian cuisine on tiptoe (I don't know if this expression makes sense in english) and you realize dishes that look inviting and, more than all, totally italian (not, as many, a copy). Congratulations.

I made this tonight for dinner and it turned out amazing! I substituted ground turkey that I “spiced” like Italian sausage and kale instead of broccolini. This will definitely be on the dinner rotation.

Made fresh orecchiette last night following your previous video. No semolina flour though, just AP flour water and a little olive oil to spruce it up. Prepared it pretty similarly to this recipe (Bon Appetit's "Broccoli Bolognese"). Quite literally the best pasta I've tasted in my life. Crazy how something so sublime comes together from such simple ingredients!

Ive made broccoli pasta with sausage using farfalle , different dish but this classic take is fabulous , one thing thats a nice addition is some Calabrian peppers , I add it to mine right at the end .....Nice bit of tang and just enough bite to open it up a bit ...
