- This is my method for making spaghetti with broccoli garlic and oil so that the broccoli isn't cooking to hell. Its basically spaghetti aglio e olio but with the addition of broccoli. Aglio e olio is a great template for adding vegetables to it. Broccoli is one of the best. This is one of my favorite pasta's right now. Tune in to find out how I make it.

I’ve watched it 5 times in preparation for my first attempt… which hasn’t happened yet 😂
I start with diced onions, wilt them before I add garlic, get them golden, then broccoli and chili. Onions add a whole 'nother dimension to this dish. One of my favorite aglio olio variations too!

Actually boiling isn't that bad...trick is not to over do it is all. Works either way
Never had this, I can see it good both way. In fact, I should try cooking them both ways. I do suspect I will like the non-boiled better.

I think I watched this for the first time three days ago, and since have made it twice. I like to add a little lemon juice as well, but MAN this is so good. I love the broccoli cooked this way - absolutely hate when it is mushy. Thank you for another amazing staple dish!
YAY! I discovered this channel very recently and surprised that a guy from New York I think cooks like an Italian ... my mum would say Venice and I would say who knows? Great for a vegetarian like me definitely. i didn't caramalize the broccoli steamed it but otherwise followed the recipe and best fast food!!!!

Stephen, I want to thank you so much. For the first time I've made sauce out of my starchy pasta water, I tried it before but it never worked. I made this dish and I truly felt like a magician when the pasta water and the oil formed a sauce and coating for the pasta and the broccoli, so amazing!!!

I live by myself and try to eat as well as I can but every now and then I get super jaded with having to cook elaborate, time-consuming recipes on my days off and just want to slap something together cheaply and quickly. I tried this tonight and it was shockingly good and way more than the sum of it's parts. I think I've found a new weeknight favourite. Now my apartment smells of browned garlic but I don't mind because it's amazing. Thank you so much Steve

Made this on my work-from-home lunch hour today. Took me all of 15 minutes and it was amazing! I added some grilled chicken for protein.
I am supposedly vegan but have been known to throw in some canned skipjack tuna ... still technically Italian and low mercury etc.
OMG!! Thank-youi!! My grandmother (italian) used to make this, forgot until now. She'd save a serving of broccoli for herself and have it with freshly baked bread still warm and cut thick. Ah, food memories are the best. Making this tomorrow!
Where in Italy was she born? i only found this in Venice and would love to hear her story.
My Calabrese mum does the exact same thing except she purees some of the cooked broccoli and garlic along with 1/2 a cooked potato and stirs this 'sauce' through the finished pasta. Elevates it to an amazing place.

I cook my pasta in a high edged stainless steel skillet! I figured out how to put enough water to cook any pasta al dente & not have to drain out water! I use the starchy water to make any easy sauce - some butter in the water or sprinkle some low sodium chicken bouillon in the pan! I throw frozen peas in when the pasta is just about done. I like my veggies not mushy!

2. I like the fact that you’re flexible on classic preparations and recipes. Oil, cheese, cream, butter... They can all pull a dish together, regardless of traditions.
Growing up in an Italian home, we ate this a lot. We could not pronounce the proper name so we called it hallelujah sauce! You nailed the recipe. Great way to get kids to eat broccoli 😊
"Aglio olio e parmigiano" is pretty common in Italy, and tastes amazing, so I agree with you that it goes well in this dish. I will try this recipe right now, thank you for the inspiration!

Yum! I like a few drops of toasted sesame oil in with the broccoli, which gives is a more 'roasted' taste.

Broccoli, garlic, guanchale, King prawns, seasoning, vegetable stock and cream.

I Just made this recipe exactly following these instructions. Before today I would saute the garlic and crushed red pepper in the olive oil and then toss in broccoli. This time I did like shown above and I have to say this is the best recipe that i have tried for pasta w broccoli/ garlic /olive oil..thanks for taking your time to help us cook!

@@wangjangler7196 hi...well idk now since i wrote that I made it again a few times and last time i sauteed the garlic red pepper salt together then added some pasta water cooked for a few minutes then added broccoli and more pasta water. Im a garlic freak so i also added garlic powder to broccoli as well..

I learned to make this by watching one of my Italian friends. He learned to make it from his mother many years earlier. I made it 30 years ago and almost forgot about it until I watched your video. Making it again tonight! Thank you for reviving memories.

I just recently found your channel and I really like it. The recipes are simple and tasty and remind me of the meals I had growing up at my nonna's house. She was born in Naples and immigrated here in the 1920's. I grew up in NJ, so I knew a ton of Italian American's just like you. Keep up the good work.
As a student this is one of my go to recipes! I LOVE IT!
I'm eating it right now. Delicious! I didn't have any pepper flakes on hand, so I used ground red chili pepper. Adds a nice kick. I got great caramelization on the broccoli, but kept it crunchy. I've never had this dish before, and I gotta say I started to chicken out about halfway through. The broccoli smell wasn't very appetizing, and I worried that I was adding too much oil. Turns out it was just about right. At the end I deglazed the pan, making a bit more sauce. Next time, I won't be afraid to just go for it. Super fast and easy, and good enough for company!
This looks amazing, I make it by putting the oil, garlic, anchovy in a frying pan and browning the garlic, then adding the broccoli and a small amount of salted water and covering it so the broccoli is braised in the liquid, then reducing to taste when I mix in the spaghetti. I'm trying it your way tonight, by adding the broccoli first.

my next door store started having broccolini for some reason and I've been trying to find dishes to use it in! SO far only just used it with wok noodles + other veggies stuff. This is a great one I'll deffo try.

Great videos....I make this dish - learnt from my Italian friend when he lived with me - always used anchovy fillets at start for a base seasoning - works perfect with broccoli
I was thinking that I might find this dish lacking a bit of flavor. I would probably need to add cooked shrimps to it and butter to create a thicker sauce.

Wow this is my go to pasta recipe. I agree with you that it is not necessary to overcook the broccoli. Pecorino is the perfect cheese for this. I also do the same recipe with cauliflower but find parmesan works better in this instance. These are my absolute favorite pasta dishes. You are amazing.

When I was a kid, I always loved it when my mom got broccoli with the really long stems. The stems still are my favorite part of the broccoli. And yes, she boiled it super soft and tender. But the stems held up nice. Tender, but al dente at the same time.

Me too. As a kid, I preferred the texture of the stems. This worked out well for me because everyone else wanted the crowns. I still love the stems but now I eat both!

I cooked this with leftover cabbage! The crisp whiter inside part, fried in the garlicky oil, not boiled. Starchy water is godly.
