I made orzo risotto last year, with eggplant and bell peppers ( browned the veggies to draw out extra moisture and tons of flavor). A wonderful summer dinner!

Our mother would make, "Spanish Rice." White rice, with her homemade spaghetti sauce mixed in and we all loved cream corn on top of it. The second one is our mom's Pot Roast, and nobody makes it like her..truly a mom's touch. Although, I've come close:) Love this recipe, thank you!
I added onion (in with the zucchini) and sausage (that I first slice cook till they develop a nice crust, then remove before the veggies and return right before the stock), and it comes out absolutely amazing each time. I normally used smoked sausages, and that extra smokey flavor goes incredibly well with the zucchini.
Going to the supermarket to buy the ingredients to make this today made my mouth water lol thanks laura you never disappoint xoxo

i'm having a difficult time trying find fresh zucchini in my local stores now for some odd reason, but i love it. personally, i think it gets bitter if it's cooked too long, so i would have taken it out of the pan once it was soft, then added it back after the orzo was cooked - but that's me. definitely saving this recipe, thank you!

Laura, I loved this video and I can't wait to make this dish. One of my favorite childhood recipes is a dish called hodge podge. It was a recipe my grandmother made from her childhood on the East coast of Canada. It was all the new vegetables in the garden in a gorgeous cream sauce. Did your Nonna have an Italian version of this?
