    Beautiful! Thumbs up from a Louisiana native. Pro tip - if you like thick, creamy consistency; you can take some of the beans out at the end and smash them. blend them a little and add back into the pot. Some like it where the beans maintain their integrity like you've done. Some like it where the beans have broken down to thicken the sauce.

    As a cajun, I gotta commend you on this recipe! I personally like to brown my sausage in the pot i cook it in before the vegetables.

      I do too. I use the rendered fat to cook the veggies.

    Will for sure be trying this out. I'm scouring RUclips for every bean recipe I can find right now. My mother went to Sam's Club and asked me if I needed anything. I said, "some dry beans if the price is good". She brought me a 12lb bag of dry beans.

      ​@@ChefBillyParisi made it. Had to sub Creole seasoning and a bit of extra cayenne for the Cajun seasoning, but it was delicious. Even my picky wife scarfed it down! Thanks, chef!

    I am from Louisiana and I never rinse the rice. Plus I brown the sausage first. Looks amazing!!! Making this.

    I paused this video the second you said rice video! YES! Man, I’m a whiz in the kitchen, BUT as my sons say, “if you were on a cooking show and rice was an ingredient, you’d be sent home.” 😂

    Chef. One question. If I wanted to make this without meat would liquid smoke be acceptable to infuse that smoked meat flavor? Any thoughts?

    Couldn't find the granulated onion or garlic ingredients. So just using powered. is it the same ratio?

    Can’t wait to try this recipe… but do you have to use red beans? I never have them in my pantry but I do have pinto beans.

    Those are small red beans not kidney beans , correct ?

    Red beans and rice isn’t a Cajun dish, but otherwise not a bad recipe. Except that isn’t andouille sausage. May have been sold as andouille, but it’s not.
    Also, any “Cajun” dish or other south Louisiana dish that involves meat - the meat always gets browned first and the veggies sweated in the fat from that. This is one of the tenets of Louisiana cuisine.
