This is animated using a style called stop-motion or "Claymation". The models are all made out of clay and are intricately moved one step at a time while snapping pictures of each change. Then in editing, they run all the pictures in sequence creating an animated sequence that they can then apply special effects to. Other well known movies that use claymation are The Nightmare Before Christmas, Wallace and Gromit, Chicken Run (I recommend watching this underappreciated movie), Coraline, just to name a few.

ParaNorman was actually the first Laika movie they started incorporating 3D printed pieces into their stop-motion! They modeled the bodies and heads in a pretty standard way, but 3D printed hundreds of clippable faces for each character in order to animate their expressions.
They did a Laika exhibit at the Portland Art Museum awhile ago and it was super cool--they had one of the face drawers for Norman on display.

This movie also got me in my feelings. When I was younger I was angry about a lot of stuff and that speech at the end between Agatha and Norman really helped me with that. Your reaction was great!!! I look forward to watching more!
