@@raining1975 is a single edge used for other specific things?
@@imbatmanireallyam9122 Single Bevel is typically used for Sushi stuff. Yanagiba for slicing proteins, Usuba for doing fancy vegetable garnishes. Single bevel knives are harder to sharpen and harder to use because they steer when cutting.
The full shop vs the rock chop is how I find dice as well, the sg2 AS and ZDP189 totally appreciate that method. 😄 Meshiagare' 🥢🍽🔪
