Following the Raffaello cake, this time I made a chocolate cake that tastes like Ferrero Rocher.
Both are my favorite chocolates. How delicious are they!
I made hazelnut whipped cream with hazelnut cake sheet.
It's really good !!
Here, I used the pailleté feuilletine hoping a crispy cookie texture in Ferrero Rocher Chocolate.
pailleté feuilletine is like a crispy waffle or ice cream cone. It is also the same as the Langue de Chat. It needs to be baked very thinly.
It's really delicious as a simple snack also.
I'm also telling you how to make it in the video, but you can buy it at the internet baking mall.
Actually, I expected it to be crunchy by putting it on whipped cream. But It became a little soft.
If it was a buttercream, I think it would keep the texture.
So you must bake it crispy till brown.
The cake is more delicious with finely chopped hazelnuts between the sheets.

In this recipe, I reduced the cake flour and added hazelnut powder, and it was really moist and full of hazelnut flavor.
It became a savory sheet. Highly recommended!
You can replace almond flour,
Then you won't taste Ferrero Rocher
you will get 4 to 5 of 1cm thick sheets.
After preheating at 170℃ for 20 minutes, bake at 160℃ for 30 minutes.
Nutella whipped cream tastes exactly like Ferrero Rocher chocolate.
If you like Ferrero Rocher, I think you will like it. Highly recommended. ^^
Ingredients (15cm / 6inch round cake)
* pailleté feuilletine (crispy waffle)
Soft butter 30g
Sugar Powder 30g
Egg White 20g
Plain flour 30g
* Hazelnut Chocolate Genoise (15 x 7cm cake pan)
2 eggs (about 108g)
Sugar 60g
Cake flour 30g
Hazelnut Powder 36g
cocoa powder 14g
Fresh cream 36g
egg whites 50g
sugar 50g
* Nutella whipped cream
Nutella 110g (Ferrero Nutella Spread)
Hot heavy cream 110g
Room temperature heavy cream 190g
* Cocoa syrup
Water 100g
Sugar 24g
Cocoa 24g
Boil and let cool then use.
* Ganache Glaze
Hot whipped cream 120g
Dark Chocolate 120g
* Decoration
Hazelnuts, chopped

I made this recipe today~ its very tasty and my whole family loved it. I honestly did not add hazelnut powder because we did not have it in our supermarket. So I used 40 gr flour, 30gr chocolate powder and 10gr of instant coffee. Coffee usually enhances the chocolate flavor. And it still turned out well.
I also skipoed the chocolate syrup because the cake is already moist with this whipped cream base icing.
Give it a try! It was good!

The icing sugar , was it the one with cornstarch ?
Delma Gomes Powdered sugar have cornstarch to keep the sugar from caking.
Didn’t the crispy part get moisted from the icing?

I was skeptical about making this cake because it seemed hard to me in first place. Then, I decided to make it anyway and I have to say that it was pretty easy. It took me a while, that's true, but the result deserved it. So tasteful and beautiful, close to the result of Joconde, thing that I was not expecting, this recipe is the perfect one. My advice is to not use a stand mixer as Joconde did because you will not be able to control your mix. Also, do not forget this tip with the toothpick before the cake goes to the oven. What I want to say, is just follow all the steps, even the ones that are not looking necessary.

I made it last saturday for father's day here where I live and wow... one of the best cakes I've ever eat! The flavor is rich and it's not too sweet. I coudn't find hazelnut powder (I'd have to order online and it wouldn't be here in time), so I blended some hazelnut on a food processor. It wasn't as thin as the one in the video, but it worked just fine. Just the pailleté feuilletine wasn't crunch anymore when it was served, such a shame because it's so good to eat it alone.

I just made this cake and yes!!! It is delicious. The cake is so soft, not too heavy but everything goes so well together. The nutella cream, the choco cake and the ganache all is just so right. But the crispy waffle turns out soggy because i made it a day before. But then it is okay because i can add it in seperate. Thankyoy for the great recipe! 😊👍

hey @Joconde, you are great with your work... I tried this one, this recipe flopped..😞 I'm surprised u made 4 layers.. I could barely get just 2 layers... by d way the ingredients were just so little.. say the overall was 360gms... how did you make 4 layers??

I already did it. I fell short with the amounts of the cream. 16 cm molds are used here. or 14 cm. I used 16 and I put 10% more quantity, but I still fell short. I also made it different from the cream because with your method I did not like how it turned out. Likewise, although this time I did not, with cream it is always better to use gelatin, because the cream always softens and glides. But otherwise it is a very cute cake. I made it for my son who is 18 years old

I followed the instructions precisely... the nutella and heavy cream mixture came out of the freezer like an ice cream. Impossible to whip, still tastes good tho. Is there a mistake in the translation and should be put in the fridge instead of the freezer ?
