Ingredients
Rainbow Sponge (For three sheets 15cm in diameter. Slice 1.5 cm thick each)
190g Egg white (about 6)
170g Sugar
50g Egg yolk (about 2~3)
180g Cake flour
45g Unsalted Butter
60g Milk
4g Vanilla extract
🖤 For icing
400g heavy cream
32g sugar
🖤 Sugar syrup
60g water
15g sugar
5g Kirsch ( optional )
🖤Joconde's tools

이 번 케이크는 샤방샤방한 파스텔톤 무지개 생크림 케이크 입니다.
무지개 케이크는 이미 오래전에 아주 사랑을 많이 받아온 케이크 지요.
파티나 생일을 위해 만든다면 자리를 빛내줄 멋진 케이크 인것 같아요.
영상속 제누아즈 반죽은 시트 세 개 분량 입니다.
6가지 컬러를 하려면 반죽을 두번 하셔야 합니다. ^^
한 번에 많은 양을 하여서 6개 동시에 굽는것은 색소 섞는 동안 반죽이 다 꺼져 버리기 때문에 추천하지 않아요.
오븐이 작아서 한번엔 다 구울수 없다면요...
시트를 두 개씩 굽는다면 계란흰자 4개(125g)를 사용하고, 나머지 재료는 66% 만 계량하고요.
시트를 한 개씩 굽는다면 흰자 2개(63g)에 나머지 재료는 33% 만 계량 하세요.
6개 시트를 하나씩 굽는다면...물론 시간이 쫌 걸리지요. ^^;;
하지만 한 번 구울때 13분 정도 걸리니 그닥 긴 시간은 아니고요,
중요한 건 그 노력을 예쁜 케이크로 보상받습니다. ㅎㅎㅎ
이 케이크 데코는 예전 영상에서 소개한 하트 마시멜로우를 사용하였습니다.

🖤무지개 제누아즈 (15cm 시트 3장) 각각의 시트는 1.5cm 두께로 잘라썼습니다.
계란흰자 190g (약6개)
설탕 170g
계란노른자 50g (약 2~3개)
박력분 180g
무염버터 45g
우유 60g
바닐라익스트랙 4g
🖤아이싱
생크림 400g
설탕 32 g
🖤설탕 시럽
물 60g
설탕 15g
키르슈 5g (옵션)
물과 설탕을 넣고 바르르 끓인 후 식으면 키르슈를 넣어요.

I made this cake on my birthday and it turned out great! It was fluffy,but make sure to add all the meringue into the batter because I forgot and it turned out a bit hard.

I love the pastels! Makes me think of Spring time! Throw in some of the caramel candies, so it might seem like the pot of gold at the end of the rainbow. ;)
