Garlic belongs in this recipe, its not optional. Without the garlic it would not be Tomàquet (Pan con tomate) The pepper is optional! A little bit more olive oil would be way better... ;) ;)

But by the time catalans started to toast the bread and put sometimes garlic, tomatoe and oil when they ate it with meat or bbq... and we still call it pà amb tomàquet. It is just a variant of the traditional way (and there are more...). I guess they/we created this variant because is common to eat bbq with toasted bread, garlic, oil and alioli... maybe other's prefered tomatoe instead of alioli.
Actually this tasty treat is made with stale bread (3 days old) and the tomatoes are used to make the bread less hard and more tasty. 😉😋 That's the origin story of it anyway.
