That's actually a very good question, I think. Thank you for finally debating this on a rational level. There is absolutely a place for trick plays, where you are misleading the opponent into believing you're going to go one way rather than the other, for instance, or you're going to run rather than pass, but to mislead them into thinking the game is not happening while you steal an advantage is simply shameful, and, to my mind, should always be regarded as such.

The best solution is for the coaches to inform their players that if this happens, it's a live play. In fact, there are a couple of videos in which this play was foiled by opponents who didn't fall for it.

It is only offsides if a member of the Offense is set up across the Line of Scrimmage prior to the ball being snapped. Since the QB didn't step across the LoS before the ball was lifted from the ground, there was no offsides to be called.
